All Things Absinthe This page is about the spirit Absinthe, its controversial history and modern day resurrection. I have been in the hospitality industry for 20 years.

Like many, I viewed absinthe with a mixture of fascination and distrust. Conflicting opinions abounded as to its effects and history. Was it dangerous? How is supposed to be served? How come it's everywhere, yet supposed to be prohibited? By what standards can anything half-seen or half-known, be judged? My first experience with the spirit was serving Hill's Czech absinth in a club in the UK. Ther

e were flaming sugar cubes and testosterone wagers. There was retching and regret. It seemed to me that the spirits fearsome reputation was well deserved. Since then, the category has grown steadily, as countries repeal laws and rewrite accepted wisdom. There is a wealth of skill and ambition creating the new, or resurrecting the old. From big business to backyard stills, absinthe is being made all over the world. Quality is not assured, rather discovered. Loyalty is hard won, then fiercely defended. It is not for everyone. It is a true spirit of independent, individual taste. This page will delve into the history and renaissance of absinthe, and I hope you will come to share my love for this queen of spirits.

Tremors

A twist on Toulouse Lautrec's Earthquake cocktail

30mls Stolen spiced rum
30mls VSOP Armagnac
10mls Blanche absinthe
10mls Sugar syrup

Stir with ice and serve straight up, garnish with fennel flowers.

The coffee and smoke of the spiced rum combines beautifully with the absinthe, bolstered by a rich base of armagnac.
The fennel flowers are edible, so graze on them to bring out the absinthe flavours.

Did you know.........
By 1903, absinthe had reached such a height of popularity that wormwood was being exported from the US back to Europe to meet demand?

An article in the Chicago Daily Tribune, April 12, 1903, describes the cultivation of wormwood in Wisconsin. It is rendered down to an oil, which was used to make strong, effective medical liniments. This oil was being exported to Europe to be used to create "The Green Terror of France." By 1902 the price of a barrel of wormwood oil had risen from $1 to $6.

The report says that absinthe was being created in large in America to meet the demand for "this rank poison" in cocktails. "Just a dash of absinthe" is an ingredient of over 150 classic cocktails from the pre-Prohibition era. The author spouts the familiar warnings of the dangers of absinthe, and claims that even a dash, after a couple of the concoctions, creates the familiar image of the dead-eyed, convulsing maniac.
