- Meet our Sous Chef, Carlos Moran, originally from Guayaquil and proudly calling Galapagos home since moving here at 18 years old. Carlos has been part of the Pikaia Lodge family since 2014, he brings passion, energy, and heart into every dish he creates. For him, the most rewarding part of his role is crafting memorable gastronomic experiences for our guests while sharing meaningful moments with his team. Every day in the kitchen is filled with good vibes, emotions, and excellent company.
When he’s not creating culinary delights, you’ll likely find him cooking at home for family and friends, playing online games with coworkers, or singing whenever he gets the chance. Unsurprisingly, his favorite place at Pikaia Lodge is the kitchen, where he feels most himself. One of his favorite dishes on our menu is the black risotto with prawns, a dinner favorite he describes as absolutely delicious.
Galapagos transformed much of his personality and inspired his love for cooking, while deepening his appreciation for conservation and the fragility of this extraordinary ecosystem. He is especially fascinated by hammerhead sharks, having encountered them while diving around the islands. Although he comes from Ecuador’s warm coast, he loves the cooler season in Galapagos, starting his mornings with a hot coffee. His favorite island spot is Bartolomé, where breathtaking views, snorkeling adventures, and the occasional Galapagos penguin make every visit unforgettable.
