Well … it’s been a while! Three months, in fact. 😬

Karen’s Corner has accidentally taken a little summer holiday of its own, but the Summer Edition is finally here … grab yourself a cuppa and let’s catch up!

Perhaps the reason I haven’t written one for a while is also the theme of this one … life has been very, very full.

There have been veg boxes and weeds, music and musicians, birthdays and new carpets. Tours, golf, surfing, a few blissful days on Mull, puffins on Staffa, family celebrations in Ireland and our attempt at an Analogue Summer with the kids.

There have been lots of wonderfully ordinary moments and some much harder ones too, which have reminded us just how important those ordinary moments really are.

I think we started our Analogue Summer hoping to encourage the kids to look up from their screens and be a little more present in their own lives but I t turns out I probably needed the reminder just as much as they did.

Life is busy and there will always be another job to do, another email to answer, another patch of grass to cut and, at Fossoway at least, approximately 4,728 weeds demanding attention but the people, the trips, the dinners around the table, the friends dropping in, the birthdays, the ridiculous boat journeys to see puffins … that’s the actual stuff of life.

So this Summer Edition of Karen’s Corner is really about that.

Trying not to be so busy building a life that you forget to live it. 💛

This week from the Fossoway Kitchen 🧑‍🍳 … Aubergine, Cauliflower & Coconut Curry. 🌿

We might still be clinging onto summer, but there’s just enough of a nip in the evening air to make a big bowl of something warm and comforting feel very welcome.

Golden cauliflower and soft, silky aubergine are simmered in a gently spiced coconut and tomato sauce to make this simple, generous curry … packed with vegetables, full of flavour and perfect for bringing straight to the middle of the table.

Serve with fluffy rice, warm flatbreads, a generous handful of fresh coriander and a squeeze of lime, then let everyone dig in.

As always, our veg box subscribers received the recipe card in their box this week, but we thought we’d share it here too because good food is always better shared.

Families are making their way to the woodland for their day of exploring at Fossoplay , veg is getting packed into boxes that will soon be making its way into local kitchens, plans are being formed in the office and the animals are all enjoying their breakfasts.

This week from the Fossoway Kitchen 🧑‍🍳 … Summer Garden Orzo with Courgette, Tomato & Crispy Shallots. 🌿

Juicy tomatoes, golden courgettes and garlic folded through silky orzo, finished with fresh herbs, lemon and, arguably the best bit, a generous scattering of crispy shallots.

This is summer supper territory … simple, colourful, full of flavour and best brought straight to the table for everyone to help themselves.

As always, our veg box subscribers received the recipe card in their box this week, but we thought we’d share it here too because good food is always better shared. 😊

We LOVE hearing which recipes are going down a treat in your homes! 🍽️ …

We’re now over a year into sharing a new recipe every week in our veg boxes and have built up quite the collection - our family favourites as well as new ones we’ve tried, all inspired by whatever we harvest that week for the veg boxes. 📦 🥕

We’re opening the farmyard gates again … 🌿🐴

After a little summer pause, Fossoway Farmyard Club is back for a brand new autumn block and we can’t wait to welcome another gang of muddy boots through the gate!

Monday afternoons at Fossoway are all about getting stuck in.

🐴 Caring for and spending time with the ponies
🐓 Feeding and looking after our animals
🌱 Growing, harvesting and learning where our food comes from
🪣 Taking on real little farmyard jobs
🍂 Exploring the changing seasons
💚 And, perhaps most importantly, making friends, building confidence and enjoying the freedom of being outdoors.

There’s no classroom and no pressure to perform. Just fresh air, animals, dirt under fingernails and the chance to be part of the everyday rhythm of life at Fossoway.

We deliberately keep Farmyard Club small so that every child gets to properly take part, which means places are limited.

If you have a child who’d rather come home with muddy knees and a story about what the pony did than spend another afternoon indoors … we’d love to have them. 🥰
