The light in Puglia changes in September. It turns honeyed — slower somehow — filtering through the ancient olive trees at an angle that makes everything glow. The August crowds have gone. The sea is still a warm, impossible blue. And the air smells of wild herbs and the first olive harvest.

This is Masseria il Trullino in Salento — a five-bedroom stone masterpiece built by Apulian artisans, with four-metre vaulted ceilings, arched passageways, and an infinity pool that seems to float above two hectares of 400-year-old olive grove.

Mornings here begin with a Nespresso on the terrace and the sound of absolutely nothing. Afternoons belong to the road to Otranto, to Torre dell’Orso’s white-sand beaches, to a long lunch under the pergola. Evenings end at the wood-fired pizza oven, a glass of local Primitivo in hand, as the sun slips below the treeline.
