Carcassonne feels like a journey back in time. The walled medieval city, known as La Cité, sits high above the Aude River and is one of the best-preserved fortresses in Europe. Its double walls and 52 towers make it look almost unreal, especially when viewed from the lower town.

Walk through the main gate and you’ll find cobbled lanes, small shops, and cafés inside the ancient ramparts. The Château Comtal and its rampart walk give a fascinating look into life during the Middle Ages. Visit early morning or late afternoon for the best light and fewer crowds.

For food lovers, cassoulet is a must-try. This slow-cooked dish of duck, sausage, and white beans originated right here in the Languedoc region.
