Wild Garlic & Linseed Soda Bread

Ingredients:
1 lb white flour (about 4 cups)
2 tspns sugar
l level teaspoon salt
1 level teaspoon breadsoda (sieved)
pinch of pepper
quarter teaspoon of dried mustard (optional)
cup of linseeds
2 handfulls of wild garlic chopped finely (can be done in food processor)
1 tablespoon olive oil
Buttermilk

Method:
Preheat oven to 200C
Mix all the dry ingredients well together. Mix together the buttermilk, chopped wild garlic and the olive oil, make a well in the centre of the dry ingredients and pour in the buttermilk mixture bringing it together with one hand. The dough should be soft, when it all comes together knead it for a few seconds and shape. Transfer to a baking tray, make a cross in the centre and bake for 50 to 60 minutes.
