***Goan chana masala***

Chana to be soaked overnight.
Put soaked chana in water with one and a half teaspoon of salt in the pressure cooker for four whistle.

Green masala (grinder)
1 bunch coriander
2 spicy chillies
3 non spicy chillies
6 to 10 garlic cloves
1 inch of Ginger
2-3 curry leaves
Salt to taste or vinegar
1 teaspoon coriander seeds
6 black peppercorns
Little sugar
Water
Grind above

Tadka
Oil
Little jeera and little dhaniya powder
Little hing
5 curry leaves
One and half teaspoon of amchur powder
2 chopped big onions
2 chopped small tomatoes
1 star anise
1 teaspoon of turmeric and chilli powder each
Let the mixture simmer on low flame for 3-4 minutes and once the onions get golden brown and then add the grinder masala and mix well and bring to a boil and simmer for another 3-4 mins.
Add the channa and let it cook
Towards the last couple of minutes add one a half teaspoon garam masala.
Before serving, add some lime and garnish with coriander.

*Ingredients*
_Protein:_
400 gms of fish of choice

_Vegetables:_
-1 Coconut (Grated)
-3 Tomatoes (Chopped)
-2 Big Onions (Thinly Sliced)
-4 Non-Spicy Green Chili
-8 Kokum
-Tamarind (1 ball)
-3 Garlic Cloves (Chopped)
-Half Cup Coriander (Chopped)

_Fresh Spices:_
-Coriander Seeds 1 tbsp
-Cumin Seeds ¼ tsp
-12Garlic Cloves and 1 inch garlic (cleant)
-6 Kashmiri Chilies

_Powdered Spices, Pastes and Sauces:_
-Ginger Garlic Paste 2 tbsp
-Turmeric Powder 1/4 tsp


_Salt For Taste_

*Season…*
the fish with salt and fish masala set aside.

*To a water bowl…*
add the tamarind and ¼ cup water and microwave/ soak for half an hour. Microwave tamirid approximately 25 and set aside.

*Add some salt…*
to the sliced onions and set aside.

*In a mixer, grind...*
-Coriander seeds
-Cumin seeds
-Garlic Cloves
-Turmeric Powder
-Kashmiri Chilies
-Grated coconut
-cu**in Powder
-Water

*Curry*
•Add the *fine paste* from the mixer to a cooking vessel.
•Add the *tamarind water* prepared earlier. Make sure to squeeze out the tamarind.
•Add the *softened onions* and *green chili* and heat the vessel and bring the contents to a boil.
•Reduce the flame to a medium-high and add the *fish* and *salt* and place a lid and allow to cook for 5 minutes.
•Garnish with *sliced green chilled n deseed lastly fresh coriander*.

*Ingredients*
_Protein:_
8 Eggs

_Vegetables:_
-1 Small Coconut (Grated)
-3 Tomatoes (Chopped)
-2 Onions (Chopped)
-6 Non-Spicy Green Chilies (4 Whole and 2 Sliced & Deseeded)
-2 Spicy Green Chilies (Whole)
-12 Curry Leaves
-12 Mint Leaves
-Half A Coriander Bunch (Chopped)

_Fresh Spices:_
-Cumin Seeds
-1 Inch Ginger
-10 Garlic Cloves
-1 Piece Of Star Anise
-1 Piece of Mace
-2 Kashmiri Chilies
-6 Black Peppercorns
-2 Clove Sticks

_Powdered Spices, Pastes and Sauces:_
-Ground Asafetida (Hing)
-Ginger Garlic Paste 2 tbsp
-Turmeric Powder 1 tsp
-Coriander Powder 1 tsp
-Red Chili Powder 1 tsp
-Garam Masala 1 tsp
-Egg Curry Masala Powder (Coriander, Chilli, Cumin, Black Pepper, Cassia, Garlic, Tumeric, Dry Ginger, Black Cardamom, Clove, Curry Leaf, Fennel, Star Anise, Mint Leaf, Fenugreek and Common Salt)

_Salt, Sugar (2 tbsp) And Ghee For Taste_

*In a mixer, grind...*
-Grated coconut
-Coriander powder
-Chili powder
-Tumeric powder
-Egg curry masala powder
-Whole green chilies
-Ginger
-Garlic
-Fresh Coriander
-Clove
-Peppercorns
-Mint leaves
-Sugar
-Water

*Curry*
•Heat 3 tbsp *oil* and add a pinch *cumin seeds* and wait for them to splatter.

•On a low flame, add a pinch of *hing* followed by *onions*, *Kashmiri chilies*, *mace*, *star anise*, *bay leaves*, *curry leaves* and *ginger garlic paste* and mix .

•Once the *onions* become translucent, and the *chopped tomatoes*, *deseeded green chillies*, *garam masala* and *salt* and mix on a medium flame till the ingredients cook and reduce to a paste.

•Add the *grounded ingredients* from the mixer, mix all the contents and allow to cook till it starts to bubble.

•Add *water* and allow it to come to a boil again.

750 gm Chicken

_Vegetables:_
-1 Green Bell Pepper (Sliced)
-4 Tomatoes (Sliced)
-2 Potatoes (Chopped)
-2 Onions (Chopped)
-2 Carrots (Chopped)
-4 Green Chilies (Chopped)
-5 Curry Leaves
-Half A Coriander Bunch (Chopped)

_Fresh Spices:_
-Cumin Seeds
-Mustard Seeds
-2-3 Cinnamon Sticks
-1 Medium Ginger
-1 Bulb Of Garlic
-2 Pieces Of Star Anise
-1 Piece of Mace
-4 to 5 Kashmiri Chilies

_Spices To Grind:_
7 Black Peppercorns
6 Cove Sticks
Seeds Of 4 Cardamom Pods

_Powdered Spices, Pastes and Sauces:_
-Ground Asafetida (Hing)
-Chicken Masala Powder 20 gm
-Bafat Masala Power 20 gm
-Ginger Garlic Paste 3 tbsp
-Turmeric Powder 2 tsp
-Coriander Powder 2 tsp
-Red Chili Powder 2 tsp
-Garam Masala 2 tsp

_Salt, Sugar And Vinegar For Taste_

*Marinade*
To the chicken add Bafat Masala, Chicken Masala, Ginger Garlic Paste, Coriander Powder, Turmeric Powder, 2 tbsp and Salt to
taste.

*Curry*
•Heat 2 tbsp *oil* and add *cumin* and *mustard seeds*.

•Add a pinch of *hing* followed by *turmeric powder*, *Kashmiri chilies*, *mace*, *star anise*, *cinnamon sticks* and *curry leaves*.

•Throw in the *onions*, *garlic*, *ginger* and *green chilies* and give it a mix.

•Add the *carrots*, *potatoes*, *green bell peppers*, *red chili powder* and *garam masala* and give it a mix with high flame on.

•Add the the *grounded spices*, mix all the the ingredients well and let it simmer for 5 minutes and let the vegetables cook.

•Add a tbsp of *sugar* followed by the *marinated chicken* and *fresh coriander* and mix well. Let it simmer for 7 minutes till it throws out the water.

•Aftee that, add *water* as per the quantity of the chicken and let it cook.

•Add vinegar and salt to taste.

•Add some *fresh coriander* for garnish.
