***Goan chana masala***
Chana to be soaked overnight.
Put soaked chana in water with one and a half teaspoon of salt in the pressure cooker for four whistle.
Green masala (grinder)
1 bunch coriander
2 spicy chillies
3 non spicy chillies
6 to 10 garlic cloves
1 inch of Ginger
2-3 curry leaves
Salt to taste or vinegar
1 teaspoon coriander seeds
6 black peppercorns
Little sugar
Water
Grind above
Tadka
Oil
Little jeera and little dhaniya powder
Little hing
5 curry leaves
One and half teaspoon of amchur powder
2 chopped big onions
2 chopped small tomatoes
1 star anise
1 teaspoon of turmeric and chilli powder each
Let the mixture simmer on low flame for 3-4 minutes and once the onions get golden brown and then add the grinder masala and mix well and bring to a boil and simmer for another 3-4 mins.
Add the channa and let it cook
Towards the last couple of minutes add one a half teaspoon garam masala.
Before serving, add some lime and garnish with coriander.
