The Story of Tuscan Gnudi 🌿

Gnudi are one of the most traditional and comforting dishes of Tuscan cuisine. Their name literally means “naked” in the Tuscan dialect — because they are essentially the filling of a raviolo, served without its pasta wrapper.

Made with creamy ricotta and fresh spinach, gnudi are a beautiful example of Tuscan cucina povera: simple, humble ingredients transformed into something delicate and full of flavour.

🔸ingredients — serves 4
* 500 g fresh ricotta
* 300 g fresh spinach
* 1 egg
* 70–100 g grated Parmigiano Reggiano
* 80–100 g flour
* A pinch of nutmeg
* Salt & black pepper

For the sauce
* 60 g butter
* Fresh sage leaves
* Grated Parmigiano Reggiano
🔸preparation
1. Cook the spinach briefly, then drain and squeeze it very well to remove all excess water.
2. Finely chop the spinach and combine it with the ricotta, egg, Parmigiano, nutmeg, salt and pepper.
3. Gradually add the flour until you have a soft mixture that can be shaped.
4. With lightly floured hands, form small oval dumplings.
5. Bring a large pot of salted water to a gentle boil. Cook the gnudi in batches. When they float to the surface, let them cook for another minute, then carefully remove them.
6. Melt the butter with fresh sage until fragrant and lightly golden.
7. Gently toss the gnudi in the sage butter and finish with plenty of Parmigiano.

Simple, rustic and unmistakably Tuscan — the kind of dish where tradition speaks through every bite. 🌿

Sophie and Xuan-Anh wedding was a beautiful coming together of cultures, families, traditions, and lifelong friendships.

With Sophie’s German heritage and Xuan Anh’s Vietnamese roots, guests traveled from near and far to gather in the Tuscan countryside, bringing with them different languages, stories, and customs. What they shared, however, was something universal: the joy of celebrating love.

Everything started around the kitchen table, where the family rolled up their sleeves for a cooking class, learning, laughing, and creating memories together. It continued with a relaxed pizza party under the Tuscan sky, where conversations flowed effortlessly!

Then came the wedding day—a heartfelt celebration filled with emotion, meaningful moments, happy tears, and unforgettable smiles. Surrounded by family and friends, Sophie and Xuan Anh exchanged their vows in a setting that felt both intimate and timeless.

Some weddings don’t just last a day, they weave themselves into the very fabric of our Agriturismo.
For three unforgettable days, we had the absolute privilege of hosting a wonderful couple, Charlotte and Chris, their beautiful families, and closest friends who traveled all the way from Nottingham to our hills. 🇬🇧✈️🇮🇹
From the very first welcome hug to the final goodbye, these three days of celebrations were a perfect, beautiful contrast. On one side, a breathtaking, effortless British elegance that made every moment feel like a classic romance. On the other, that brilliant, heartwarming British sense of humor—the kind of witty banter and genuine laughter that echoed through the tuscan nature and made everyone feel instantly at home.

We watched them share quiet morning coffees, toast under the Tuscan stars, and dance the nights away, surrounded only by the people who matter most in their lives.

Three days. One incredible celebration.

Rachel & Korey ._.elaine .hess ( 23 and 24 y.o) a young couple from the United States 🇺🇸( Illinois and the gloom originally from cape town 🇿🇦) , chose Villa Poggio di Gaville to begin their next chapter surrounded by the people they love most. Together with their closest friends and families, they turned the villa into a place of pure joy.

A pizza party, a dream wedding, a farewell brunch, and countless hours of dancing to hip-hop and R&B under the Tuscan stars. Their laughter, energy, and happiness were contagious, making these days truly unforgettable.

Last week we hosted our first wedding of the season!❤️

There is a unique kind of magic that happens when different worlds meet in the heart of Tuscany. ✨
We are still dreaming about the beautiful wedding of Neriana and Jeremy. She brought the vibrant soul of her Albanian heritage, and he brought the warm energy of Florida, merging their stories right here at Villa Poggio di Gaville. 🇦🇱🇺🇸
It wasn’t just a wedding; it was a soulful gathering. Surrounded by their closest family and dearest friends, they celebrated their love in the most authentic way—with long tables, heartfelt toasts, and the golden Tuscan light filtering through the trees. 🌿🍷
Seeing our Agriturismo filled with such diverse cultures, united by the simple joy of being together, reminds us why we love what we do. From the emotional ceremony to the intimate dinner under the stars, every moment felt like home.
