Each piece is truly one of a kind, crafted by embracing the unique character of natural wood and layering it carefully with lacquer.

We are very much looking forward to presenting our cuisine on these beautiful vessels and sharing them with all of you.

川魚のやわらかさを活かした一皿。蓮根と芹を細かく刻んだ生地でヤマメを包み、表面をさくっと中をふわっと仕上げ、キウイとアボカドの酸味で仕上げてます。

Yamame Trout and Japanese Parsley Galette

A dish that highlights the delicate texture of freshwater fish. The yamame trout is wrapped in a finely chopped batter of lotus root and Japanese parsley, creating a crisp exterior and a fluffy interior.
It is finished with the refreshing acidity of kiwi and avocado.

山ウドと青豆、太刀魚

山ウドは豆乳と新玉ネギでムースに、太刀魚はトマトコンソメのジュレを纏わせて旨みを補強しています。
周りには自家製の青豆の豆乳と葉わさびのオイルで春の香りと甘みを添えてます。

Mountain Udo, Green Peas, and Beltfish

The mountain udo is made into a mousse with soy milk and fresh onions, while the beltfish is coated with a tomato consommé jelly to enhance its umami.
Surrounding the dish are homemade green pea soy milk and leaf wasabi oil, adding the fragrance and gentle sweetness of spring.
