Last week, we welcomed a new chef to elevate the culinary side of Poco a Poco. Today, we’re just as excited to introduce our new GM: Roy.

Roy has called Sayulita home for the past 8 years, and brings with him a rare blend of heart, hospitality, and hands-on experience—from property management to real estate, bartending to business administration.

Over the past year, Roy has served as our property manager—someone who knows this space intimately and has consistently gone above and beyond for our guests and our team. His natural leadership and deep understanding of Poco a Poco made promoting him to GM an easy decision.

His love for music, photography, and mixology speaks to the creative spirit we’ve always wanted Poco a Poco to reflect.

But more than anything, Roy understands what it means to host—to make people feel seen, welcomed, and well cared for.

We’re proud of the hospitality we’ve built, and the incredible reviews from guests who’ve experienced it. With Roy leading the way, we’re excited to raise the bar even further.

Please join us in welcoming Chef Cory Burke as the newest full-time addition to the Rancho team.

Cory’s journey started in kitchens at 13, and since then, he’s built an impressive culinary career — from opening beloved restaurants and food trucks in Charleston and Atlanta to serving up unforgettable meals at music festivals across 30+ states. Now, he’s traded the road for something more rooted — bringing his passion for bold, ingredient-driven cuisine to our kitchen in Mexico.

With decades of experience and a heart for community, Cory is here to create something deeper than just great meals. He’s focused on using fresh, local ingredients, building real relationships with local purveyors, and crafting memorable moments for every guest at the table.

He, his wife Suzanne, and their three kids have dreamed of creating something more intimate — and Rancho Poco a Poco is the perfect place to slow down, cook with intention, and connect.

This marks a new chapter for us — with our fully equipped commercial kitchen and bar now in full swing, we’re beyond thrilled to offer a chef-driven, full-service culinary experience at Rancho.
