Guided by craft. Shaped by season. Rooted in place.

The Spring Table reflects the land in its earliest abundance, when growth is tender and timing matters. Each course is prepared with restraint and intention, honoring what the season offers and nothing more.

This is the rhythm of spring at Waverly Springs, carried from field to flame, from hand to table.

Every season tells a story. This one begins with spring’s quiet awakening.

At Waverly Springs, the land sets the rhythm. Through Seasons by Waverly, that rhythm becomes a series of seasonal dining experiences, each one shaped by time, craft, and care.

Each table reflects the character of the season as it unfolds, from first growth to final harvest.

"He told them tales of bees and flowers, the ways of trees, and the strange creatures of the Forest, about the evil things and the good things, things friendly and things unfriendly, cruel things and kind things, and secrets hidden under brambles." J.R.R. Tolkien. The shift from summer to autumn has us in the woods for hours these days. Oyster, honey, jewel w**d, cauliflower, snow ear. Mushrooms are so beautiful

Our beloved sugar maple named “sugar momma” almost 200 years old and just got tapped for the first time ever. When this tree was a sapling Waverly farm had already stood for more than fifty years. Imagining what life was like here then is an experience when looking at the original wooden beams and stones. We’ve collected her sap and and look forward to many many more years of our own maple syrup. The beautiful snow drop blossoms were a nice bonus.

Two hundred and fifty-nine years ago, Robert Moffett and his family lived out of this very hearth. It gave them warmth in the winter, provided them with means to cook meals, heat water for bathing, and warm light to tell stories by. Mr Moffett named his home after Waverley, England where he was from. We now honor that name, and the history of this place we call Waverly Springs.
Two hundred and fifty-nine years later we lit the same hearth to make a meal. We look forward to opening the doors to more of Virginia and giving guests the same feeling of being welcomed and cared for.

"An agrarian mind begins with the love of fields and ramifies in good farming, good cooking & good eating.”
