Andddd we’re back! Posting has been on the back burner over the past few weeks, our cup has been running full with some incredible private dining events at the retreat.

We did remember to snap a photo of these melon beauties with Cointreau, balsamic vinaigrette and mint. This was the refreshing palate cleanser after serving our guests three delicious appetizers.👨🏻‍🍳👩🏼‍🍳

We’re having a proud with this warm batch of homemade Italian Ladyfingers.😍

These soft and cakes confections will be part tonight’s private dining dessert offering, Chocolate Espresso Semifreddo (layered ice cream pie infused with espresso reduction).

Hello there! We’re Chef Jodi and Chuck and we’re classically French trained chefs with over a decade of culinary and hospitality experience. With an eclectic passion for world cuisines, we hope to bring something new and unique to Pagosa Springs at our beautiful Pagosa Mountain Retreat.

The Retreat will be available to rent during ski season then switch to a culinary venue where you can book private dinners, attend cooking classes, and more. We’re working hard getting the space ready and prepped for so many exciting things, stay tuned!

Introducing a Pagosa Chefs original recipe, ‘Palisades 76’! 🍑🥂 The name honors both Colorado’s famous native peaches and its year of statehood, 1876.

We infused Palisade peaches with simple syrup (what we’re calling Palisades Elixir) to give the classic cocktail, French 75, a distinctively Colorado flair.

Here’s how to create this refreshing and boozy recipe on your own:
▫️2 oz dry gin
▫️3/4 oz fresh squeezed lemon juice
▫️3/4 oz Palisades Elixir (see below)
▫️2 oz Champagne
▫️1 Thin sliced Palisade peach wedge

In a large cocktail shaker, combine the gin, lemon juice, Elixir and ½ cup ice cubes. Shake vigorously for 20 seconds. Strain and pour into a champagne glass and add champagne. Garnish with peach wedge. Enjoy!

Palisades Elixir
▫️4 large Palisade peaches, peeled and rough chopped (discard pit)
▫️½ cup sugar
▫️Water to cover ingredients
▫️½ cup water, reserve to finish
1. In a medium saucepan, place peaches, sugar and water to cover ½-inch
2. Bring to a boil, reduce to a simmer and cook for 15 minutes, stirring occasionally
3. Remove from heat and with a submersion blender, blend thoroughly
4. Return to heat and add 1/2 cup reserve water
5. Bring to a boil then remove immediately and strain with a fine mesh strainer into desired container. (use a spatula to press through any remaining solids)
6. Refrigerate (or freeze for later!)
