RILLETTE OF CONFIT DUCK

A guest recently sent us this beautiful photograph from their stay at Cleopatra, which prompted us to look back through some of our old recipe books and notes.

There, we found Richard Poynton’s description of his Rillette of Confit Duck, written in his own words. We thought it was something special to share with you. ❤️

“We confit the duck here at Cleopatra and to do this, we render the fat off the bird by roasting them on baking trays. You have no idea how much fat you get off one duck. We then take the legs and thighs and cook this in the duck fat for 8 hours until the meat literally falls off the bone. The base of the dish is a rather large Yorkshire muffin which we have slightly flattened on the top. We have filled this with the confit duck and have added an orange and date jus, just because orange and dates go so well with duck. Around the sides, we have Steamed Butternut and a little feta cheese.”
