At Pullman Quay Grand Sydney Harbour, Pullman’s Asia-Pacific Food & Beverage Ambassador, Nat Thaipun, set a table for twelve, and let it move on its own terms.

There was no fixed sequence. Watermelon with mint, oysters with finger lime, betel leaf ci**rs, wagyu skewers, kangaroo larb, lamb ribs with panang, and mango sticky rice came and went - passed, tasted, revisited.

The food didn’t sit still. Neither did the table. Nat’s cooking kept everything in motion. Dishes built to be shared, conversations built to follow.

At Pullman Auckland, Pullman’s Asia-Pacific Food & Beverage Ambassador, , worked alongside Chef Johnny Roullier to explore what happens when different perspectives meet in the kitchen.

The result was a twelve-course journey where that exchange could be felt in every plate. Dishes like venison, wagyu, snapper, crayfish, pāua, and lamb were matched with drinks that didn’t follow the usual rules, each pairing shifting the way the food was tasted and experienced.
