Inspired by Puerto Rico’s beloved Piña Colada, this beautifully clear, silky cocktail brings together golden rum, coconut, pineapple and a touch of lime.

Familiar flavours, refined with a little modern technique, made for lingering over as the light begins to soften across the bay.
