From 18 to 20 September, Hotel am Brillantengrund will host Gustaf Westman’s pop-up as part of his European tour.

Known for his playful furniture and colourful objects, Gustaf has collaborated with brands including IKEA and Nike, and now he’s bringing his universe to Vienna, with our hotel as the setting.

Introducing our new menu and our new chef !

Our updated and refined menu is by Dennis Velasco Jr. – born in the Philippines, raised and trained in Vienna. After roles at Do&Co, Ritz-Carlton and Dots Group, most recently as Executive Sous Chef at Almanac Palais Vienna and in a leading kitchen role at Hotel Imperial, he’s now bringing his own story to the plate: Filipino flavors rooted in Austrian produce.

The new menu tells exactly that story. Classics like Chicken Adobo and Lechon Kawali meet local char Kinilaw and organic zander escabeche – elevated with kalamansi, coconut, and chili jam. Alongside them are street food favorites like Mushroom Lumpia, Chicharon and Bulalo Wantan, blending Filipino childhood memories with Viennese craftsmanship.

Two worlds, one plate. Come by and taste the story.
