Meet Louis.

Doma welcomes Louis to the Realm Precinct, located within the 5 Star Hotel Realm. Offering the culinary specialties of Southern France with elevated cocktails. Louis takes over the space formerly occupied by Buvette, with menus designed by prominent two-hatted chef, Ben Willis.

Recently appointed as Culinary Director of Doma, Ben Willis together with head chef Sun Hwa Jang, former sous-chef at Aubergine, have curated a menu that draws inspiration from the cuisine of the French Riviera and Provence using fresh ingredients from Australia. Guests can sample dishes such as John Dory with braised beans and chorizo, fougasse and tapenade, and potato and leek pithivier with salsa verde.

Louis’ European theme continues in the design conceptualised by interior designer Rachel Luchetti of Luchetti Krelle, with luxurious materials such as marble, leather, textured glass, and bronze used throughout.

Louis is now open.

Aubergine’s Ben Willis has been appointed the new Culinary Director of Doma Hotels new restaurant in the Realm Precinct. While the name is still under wraps, the restaurant is an ambitious venture, set to provide a multi-layered experience of fine dining in the classical style along with a sophisticated cocktail bar experience.

The new dining venue will also set another benchmark in design, featuring interiors from Rachel Luchetti of award-winning Sydney based, architecture and interior design firm Luchetti Krelle
