We’ve been waiting for the right moment to introduce her. That moment is now.

Welcome to our Hotel Manager, Jessica.

When she walked through the doors of Mercure Charlestown for the first time, Jessica said she felt it immediately — a sense of belonging. Like somewhere she could grow, and be part of something worth showing up for every day.

That instinct? We felt it too.

Jessica hopes every guest who checks in feels genuinely welcomed. Comfortable. At ease. And if she can make someone smile somewhere between the lobby and their room — she considers that a good day.

What does a great hotel manager actually do that guests never see? She’ll tell you herself — it’s picking up rubbish in the car park at 8am because the property deserves to look its best. It’s supporting the team quietly so everything runs smoothly by the time you arrive. It’s care, shown in a hundred small ways you’ll feel without knowing why.

Her go-to at Madison? The Eye Fillet. Tender, full of flavour, melts in your mouth. Her words — and Rahoul agrees.

And the thing guests are most surprised to learn about her?
She spends her weekends on dirt bikes, wakeboarding, and camping. Outdoors, off-grid, completely in her element.

We’ve been talking about him for a while. It’s time you properly met him. ✨

Rahoul didn’t take long to fall for Madison Kitchen & Bar. The outlook over the pool, the trees, the quietness of it — he said it felt like somewhere worth building something in.

And build he has.

His vision? Cocktails and snacks by the pool. A kitchen that talks to this community but isn’t afraid to take you somewhere else entirely — a coconut sauce here, a flavour you weren’t expecting there.

Guest favourites are already forming. The market fish in spiced coconut cream. The fish and chips — which sounds familiar until the pea purée arrives and reminds you this isn’t your average pub counter.
And then there’s the charcoal eye fillet. He calls it Newcastle on a plate. We’re not saying any more than that — yet.

Grateful to have him in our kitchen. 🙏
