Remember those dry-age fridges we gave you a glimpse of back in June? This is what our chefs have been working on.
After several months of testing, tasting and refining, we’re almost ready to introduce the first dishes in the new Mount Paul Lounge Dry-Aged Series, beginning with Robbins Island Wagyu.
The first two delicious dishes are a dry-aged Wagyu entrée with rösti potato, yuzu kosho aioli, kizami wasabi and cured radish; and a 250g MB7+ dry-aged Wagyu striploin with black garlic, seasonal vegetables, beef jus and smoked Tasmanian sea salt.
In the coming weeks, guests will be able to experience both as part of our new three-course Signature Dry-Aged Wagyu Showcase Set, or by adding selected dry-aged dishes when booking our Teishoku or Shabu Shabu sets.
And this is only the first chapter. Our chefs are already working on the next stages of the Dry-Aged Series, with dry-aged fish for sashimi to follow, and duck further down the track.
