One of my favourite things about living here is waking up to the black swans.

They drift across Moulting Lagoon like they've got nowhere to be, completely unbothered by the world around them. Some days there are just a few, other days there are hundreds.

Moulting Lagoon is one of Australia's most important black swan habitats and an internationally protected Ramsar wetland.

As we put the finishing touches on the luxury retreats, the cellar door and restaurant have quite literally risen out of the ground.

The builders are here sun up to sun down, pushing hard to bring this to life.

Our 25 metre black American barn, with polished concrete floors and soaring ceilings, is starting to show its true scale and presence. It’s bold, it’s beautiful, and it’s going to be something really special on Tasmania’s East Coast.

Think great wine, beautiful food, music, and long afternoons looking out over the water.
