The board changes depending on what's good locally at the time, which is the whole point of it. Some weeks the honey is darker and stronger; some weeks it's lighter. Nobody out here minds.

Straight off the pass.

Pizza for the table, lamb cutlets with a jug of jus, and fish finished with lemon and a generous spoon of sauce. Country cooking, the way it's always been done in Cunnamulla, with a little extra care on the plate.

The dining room is open to guests and locals alike. Pull up a chair at 15 Louise Street.

Morning tea, outback style.

You do not expect this in the middle of a working property. A shaded table, a platter carried out, and something that would not look out of place in a city dining room.

Charcoal crackers under a bright herb pesto with halved cherry tomatoes. Warm rounds topped with fresh bocconcini, a spoon of sticky chutney and torn basil.

It happens between garden stops on the Outback Garden Tour, usually somewhere with a view and a breeze. Guests sit down expecting a cup of tea and a biscuit. They get this instead.

Every meal on the tour is included, and this is the sort of thing that turns up when you are not expecting it.

The wattle is out around Cunnamulla and it does not do things by halves. Whole roadsides go yellow, the bees lose their minds, and for a few weeks the country looks like it has been lit from the inside.

It is a short window. If you are travelling out this way in the next few weeks, keep your eyes on the scrub.

This is what a garden lunch looks like out here. Green lawn against red dirt, a table set under the verandah, and hosts who have spent decades working out what will grow in this country and are happy to tell you exactly how.

Artesian water, red dirt, and not another sound for miles.

Charlotte Plains is one of the reasons people keep coming back to this part of the country. Bore water rising warm out of the ground, an open sky above you, and the sort of quiet you cannot manufacture.

It is a proper day trip out from Cunnamulla. Soak, dry off, drive home in the late light.
