Vale Peter Roberts.
What an absolute superstar and a huge personality in the fringe universe.

Peter is a much loved Fringe founder who was there from the beginning, coordinating the schools involvement in our very first festival back in 1992.

Peter was a drama teacher, a photographer, a dancer and a poet. He travelled throughout India and Nepal and published a collection of works of his travels.

Peter was so incredibly supportive and encouraging of Fringe and enthusiastic in celebrating the passing of the baton. The ongoing success of the festival was a source of joy and pride for Peter.

INGREDIENTS
• 3 cups Self-raising flour
• 1 tsp Salt
• 60g Cold butter
• ½ cup milk
• ½ cup water
NB: If you don’t have self-raising flour you can use plain flour with a tablespoon of baking powder or bicarb soda.

Here are some suggestions to take your damper to the next level. Try adding these to your dough.
• Cheese and chives
• Other fresh herbs such as parsley, rosemary, marjoram
• cheese and bacon
• sultanas
• blueberries
• dates

INSTRUCTIONS
• Oil camp oven
• Preheat camps oven over coals and on the lid
• Add flour and salt into a bowl, rub in cubed butter until mixture resembles fine breadcrumbs.
• Make a well in the centre, add the milk and water, mix with a knife until dough starts to come together.
• Transfer to a lightly floured surface and gently knead and shape into a ball.
• Place into the camp oven. Flatten slightly so that you have a round approximately 15-16cm in diameter.
• Using a sharp knife, cut two slits across dough like a cross, approximately 1cm deep.
• Brush top of dough with milk.
• Bake for 30 minutes, or until golden brown.

BAKED CORN ON THE COB


INGREDIENTS
• Whole corn on the cob
• Salt and pepper
• Butter
• Garlic
• Chives
• Heavy duty aluminium foil

INSTRUCTIONS
• Combine butter, garlic, chives, salt and pepper in a small bowl.
• Rub the flavoured butter over the corn.
• Wrap the corn in heavy duty aluminium foil.
• Cook the corn in the foil 100-150mm above the coals.
• Turn occasionally until tender – about 15 mins.

BAKED POTATOES

EXPERIENCE OUR DELICIOUS AND EASY RECIPE FOR TENDER POTATOES WITH CRISPY SKINS, COOKED TO PERFECTION IN FOIL OVER A CAMPFIRE. THESE ARE THE EPITOME OF COMFORT FOOD.
INGREDIENTS
• Medium Sebago potatoes
• Salt and pepper
• Butter
• Heavy duty aluminium foil

Here are some suggestions to take your baked potatoes to the next level.
• Cheese of choice
• Parmesan
• Cream cheese or sour cream
• Fresh herbs such as chives, parsley, rosemary, marjoram
• Bacon
• Coleslaw
• Onion - spring onion

INSTRUCTIONS
• Poke each potato several times all over with a fork.
• Smear each potato with 1 tablespoon of butter, then double wrap in aluminium foil.
• Bury potatoes in the hot coals of a campfire and cook until crispy on the outside and tender inside, about 30 to 60 minutes.
