Our final Long Table Lunch 5-Course Degustation — Are You Game Series II for 2026 was one very special Saturday at Hamlet Downs this weekend; and an absolutely perfect 'sunny sunshiney' Winters Day 🌞 👌

20 guests. 6 courses. Matched wines. Plenty of incredible Tasmanian produce, a very busy kitchen, a few moments of controlled chaos at the pass… and lots of laughter, joy and happiness around the table. ❤️

From the kitchen, it was one of those days where everything came together — The food, the timing, the people and the atmosphere.

And seeing every plate come back empty… well, that's the best reward you can ask for. 🥰

A huge thank you to everyone who joined us for this LTL series and trusted us to feed you, spoil you and share a little piece of Hamlet Downs.

And to Maître De Steve, keeping everything running out front while I in the kitchen, did my thing and MVP Danni who was a master Chef Assist and FOH assist **We make a pretty good team considering it was our first time working together! 💪

The heart is very full 💓 ... and the body a bit sore 🤣😂

From humble beginnings in 2010 on the Sunshine Coast; when we started this business to bring 'Burmese Fare' to the wider Australian public, fast forward to 2026 Melbourne Royal Awards

We're very chuffed indeed at the Tasmanian BIYB HQ ; as this has been our first time entering the Melbourne Food Awards.

We entered 3 products from our stable of traditional Burmese chilli condiments and received 3 honours in return which makes our hearts sing to know our products are enjoyed Australia wide and internationally.

Also as country farm-stay hosts at Hamlet Downs Country Accom, we are lucky enough to share our produce with people from all around the world who stay with us and get to enjoy our produce whilst feasting on our ala carte dining options, specifically our Burmese Feast.

That's a wrap on our 2026 event series 'The Supper Club' at Hamlet with fully booked dates through June, July and August

The series proved very successful with many guests asking if it will continue into the coming High Season on Friday and Saturday nights?

I can confirm there has been talks of Spring/Summer weekend dining events such as 'BBQ on the Deck' and even whispers of a 'Brunch on the Deck' on the High Season weekends.

Our Southcentral Workforce Network Hospitality Ready students are in for a real treat tomorrow, as we mentor them in Back Of House Skills.
After I go through the information sessions which are tedious but necessary and some basic knife skills, Steve will be teaching them the fun stuff and how to make their very own duck egg pasta and I will be demonstrating a traditional Carbonara (no cream) with our Hamlet Downs Country Smallgoods produce, ducks eggs and pecorino!
Then having set the table accordingly, they will serve their classmates, dine together and clean down... 👌 Add in a pop quiz to ensure information is being retained and you have a day of 'fun and practical gourmet education'

This session will be called 'From Flour To Fork' and will tie in last week's Front Of House skills as well 🤌 ..Bellisimo 🍝
