My French inspired style duck with juniper, pepper berries and mandarin.. confit slow cooked then seared to crispy skin on a bed of asparagus and mushroom chablis risotto and pan jus reduction..
Our new path at Hamlet Downs makes me want to cook yummy food for all our guests -
We know it's early days but my cooking creativity is going crazy with so many menu items and inspiring meal ideas that I have catered for guests in the past...
