✨ A LITTLE LOOK BACK AT CHRISTMAS IN WINTER 2026 ✨

We’ve been a little quiet on here lately… but before we tell you what we’ve been dreaming up behind the scenes, we thought we would share a few of our favourite moments from a truly wonderful Christmas in Winter 2026. ❤️🎄

Looking back through these photos reminded us just how special those winter evenings were.

Every Saturday our little country dining room was filled with twinkling lights, roaring fires, beautiful food, Christmas wishes, laughter and the most wonderful people.

We cooked, we poured w**e, we made a few hundred Christmas dinners 😆, and somehow another Christmas in Winter came and went far too quickly.

To everyone who travelled to the Granite Belt to spend an evening with us, to our wonderful locals who continue to support us, and especially those who return year after year — thank you.

Special thanks to Di & Steve our special Christmas elves you are more than friends & we love the fun and laughter we create with you guys.

To our staff Amanda Tiana & Gidge thank you it’s been a mad season 🤗 couldn’t have done it with out you guys ♥️♥️

We absolutely love seeing familiar local faces around our tables alongside visitors discovering our beautiful Granite Belt. That wonderful mix of locals and travellers is part of what makes these evenings so special to us. ❤️

You are the reason we get to keep dreaming up these slightly crazy ideas.

And speaking of crazy ideas…

We may have already started planning Christmas in Winter 2027.

And next year, we’re going through the wardrobe.

Some of the best moments at Sabo’s can never be planned… they simply happen.

As the fire crackled, glasses were topped up, and stories were shared, our incredibly talented guests picked up their guitars and filled the evening with beautiful music.

These are the moments that make country escapes so special—strangers becoming friends, laughter echoing through the homestead, and memories being made around a warm fire under the stars.

Thank you for sharing your talent and making the night one we’ll never forget. ❤️

Some weekends remind us exactly why we do what we do. ❤️

This Christmas in Winter weekend was one of those.

Watching strangers become friends, seeing couples linger over dessert and a glass of Granite Belt w**e, hearing laughter echo through the dining room, and watching everyone gather around the fire—it was simply magical.

In a world that moves so quickly, it’s a privilege to create a place where people can slow down, connect, and simply enjoy being together.

These are the moments that can’t be put on a menu.

Special people creating special memories.

To every guest who chose to spend your weekend with us, thank you for trusting us to be part of your story. We hope you leave with full hearts, happy memories, and a little Christmas magic that stays with you long after the fire has gone out.

From our family to yours, thank you for making Sabo’s on Severn feel so alive this weekend. We already can’t wait to do it all again next Saturday.

🎄 A New Tradition Begins at Sabo’s on Severn 🎄
What started as a dream has become one of the highlights of our year.
Our very first dinner for our Christmas in Winter has been nothing short of magical, and we are absolutely delighted to share that every Saturday throughout June, July and August has completely booked out! ❤️✨

From candlelit tables beneath thousands of twinkling lights, to warm apple strudel dusted with snow-like icing sugar, decadent tiramisu, festive desserts and local w**es, and the evening filled with laughter, friendship and the joy of gathering together.

There is something truly special about celebrating Christmas in the middle of a Granite Belt winter. The crisp air outside, the warmth of the room, the glow of candlelight and sharing a beautiful meal with old friends and new.

To everyone who has joined us so far, thank you for embracing this new tradition and filling our home with such warmth and happiness. Seeing every Saturday book out has been incredibly humbling and reminds us why we love creating these experiences.
Christmas in Winter is now officially part of the Sabo’s story, and we cannot wait to make it even more magical in the weeks ahead ♥️

We had the pleasure of attending the soft opening of Meteora Vineyard this weekend, and what a wonderful addition to the Granite Belt w**e scene it is.

From the moment we arrived, it was clear that a great deal of thought, passion and hard work has gone into creating something truly special. The venue itself is beautifully designed, offering stunning views, a relaxed atmosphere and the perfect setting to enjoy the region's exceptional w**es.

The food was equally impressive, thoughtfully crafted to complement the w**es. Every detail reflected a genuine commitment to hospitality and creating a memorable guest experience.

Congratulations to the entire Meteora team on this exciting milestone. We know firsthand the dedication it takes to bring a vision like this to life, and you should be incredibly proud of what you've created.
We'll certainly be recommending Meteora Vineyard to our guests at Sabo's on Severn and look forward to watching your journey unfold.

We are thrilled to announce that “Christmas in Winter” has returned to Sabo’s On Severn. The magic is about to begin. 🎄 We extend our sincerest gratitude to our dear friends Diane and Steve for their invaluable assistance in unpacking and decorating, a tradition we have been honored to continue for five years.

We also appreciate the help of Martin, Duane, and Steve in erecting our 19ft deer, and Amanda for her assistance in preparing the rooms.

Most importantly, we would like to express our heartfelt thanks to our wonderful guests who have booked with us over winter; we are eagerly looking forward to providing you with an exceptional experience.

Santa has ensured his suit is immaculate, and Mrs. Claus and her helpers are busily preparing a sumptuous feast.

We are incredibly proud and honored to announce that we have received SILVER in the Best of Queensland Tourism Awards for 2026! And a 95 score for 3 years running!

Adding to the excitement, Stanthorpe has also been recognised as the Top Tourist Town for 2026 — an incredible achievement for our beautiful region and a true reflection of the passionate businesses, locals, producers, and tourism operators who make this place so special.

This recognition means so much to us and is a reflection of the amazing support from our local community, visitors, staff, and everyone who has shared in our journey.
