As we close the doors on our final day of service at The Falcon Hotel 🦅, we want to take a moment to shine a big, beautiful spotlight on the true MVPs behind it all — Michael and Margot 💛

These two incredible humans aren’t just the owners of the pub… they’re the heart and soul of it. The quiet strength in the background, the ones who believed in all of us from day one. They trusted us to run their business while they were in Melbourne, and they did it with faith, grace and endless gratitude 🙏

Whether it was Michael jumping behind the bar or tackling a mountain of dishes like the quiet legend he is 🍽🧼 or Margot, the ultimate kitchen hand (despite those slightly crispy pizzas 🍕🔥😂), or working the bistro floor like an absolute pro – they showed up. Always. For all of us.

They’ve been there for late-night chats after service, the moments of laughter, exhaustion, support, and celebration. They saw us – every effort, every late shift, every little detail – and they appreciated it all. Their kindness, trust, and humour have carried us through some big days and even bigger nights.

From the bottom of our hearts – thank you, Michael and Margot. For everything. For believing in us. For backing your team. For loving this pub and the people in it with your whole hearts.

We’ll never forget what you’ve done for all of us and The Falcon. Today is for you 💫

With love,
Jayde, Brendan & the entire Falcon crew 💖🫶

WHO IS YOUR FAVOURITE PUBLICAN?

Mine is my brother Brendan.

When you think about what makes a great publican you think of warm hospitality, community connection, good humour and conversation, resilience and hard work.

Brendan has all these attributes in spades.

I always enjoy seeing Brendan interact with our customers. Whether it is helping a young kid roast marsh mellows in our fire, organising a 4 way barter with locals, spending hours producing Jerky, Olives, Jams and Sauces or just lending an ear to someone that needs it – Brendan is always thinking of other people.

He rarely complains – just gets on with it. He is the first to support sponsorship of local clubs and organisations, fund raise with raffles and provide gift vouchers for prizes.

He has been a big supporter of live bands. With his partner in crime Stuart “Youngie” Young there have been some memorable nights of music at the Falcon.

Love you Bro – I know you will be missed, but I am looking forward to spending more time with you on the other side of the bar.

BIG SHOUT OUT TO OUR TRADIES AND SUPPLIERS

We knew the “old girl” needed a little sprucing up when we bought the Falcon, but we never could have guessed the extent of work that was required to just keep it running.

Ralph (Murray River Plumbing) and Daryl (Raverty Electrics) were on speed dial early days and they always fitted our “emergencies” into their busy schedules.

Other frequent flyers were Ridley’s Pest Control, Deni & Echuca Fire Protection, Artic Refrigeration and Echuca Locksmiths

Thanks also to Denis Flood who helped us install the new beer lines and chillers.

And a very heart felt thanks to Adrian, Charlie and their crew (AV Builders) and Gerard and Shannon (Brandrick Architects) who took on our bureaucratic compliance nightmare and helped us finally resolve it.

More recently we have also been helped by Reagan (Payne Plumbing) who is a fantastic plumber and pretty decent short order cook and dish washer!

Thanks also to all our suppliers especially Pear Tree, Cadells, SuperClean, Kennedy Meats, InHospitality, Ky Water, Southern Cross Post Mix, Geoff Pilgrim Transport, Elgas, JJ Waste, MHACs, COPs, Steve’s Liquor and Echuca Frozen Foods.

Just wanted to thank and celebrate one of the more remarkable women we know - Our Mum.
Dorothy turned 92 in April and is still "doing our accounts", helping with menus and functions and you will often find her washing pots and dishes on busy nights!!
She and our father Stewart looked at purchasing the Falcon back in the day - well before the first lot of renovations. Dad was keen on buying the Falcon in 2017 even though he was dying of cancer. Mum was determined to have a go at turning the Falcon into a profitable community based family friendly pub.
Unfortunately we didn't achieve that goal but you can't deny that we gave it a good crack. And the driver of all that hard work was Mum.
Sorry it has finally beaten us Mum, but we love you and are proud of what we did achieve.

A SPECIAL SHOUT OUT! 👏

There are chefs… and then there’s Jayde. Not just the Head Chef of the Falcon kitchen — but the heart, the glue, and the mother hen of our kitchen team 🤴 🩷

⭐️ With strong leadership & organisational skills, Jayde brought stability to our kitchen & delicious cooking to boot! 😋

🩷 She mentored our young staff with humour & kindness — teaching them how to cook & work in a team, and to believe in themselves 👏

When Jayde agreed to ‘help us out’ she was already a busy person juggling two jobs, community volunteering and family life. Jayde’s commitment to The Falcon (well beyond what was originally agreed!) is greatly appreciated ☺️ THANK YOU JAYDE! 💖

We wish Jayde & Reagan, and son Harry, all the very best with the upcoming arrival of their new baby! 👼

Please drop your thanks and memories of Jayde in the comments. She deserves every bit of it ✨

THE QUEENS OF CLEAN – Michelle P & Michelle F 🧹🧼

They say you can’t run a good pub without good people…well, we have had TWO absolute legends who kept The Falcon sparkling ✨

👏 A massive round of applause for ‘The Michelles’ – our dynamic duo of big smiles, cleanliness, care, and “you missed a spot” excellence 💪💯

🛏️ From making sure our accommodation was spotless
🍽️ To polishing the pub so it shined like new
🚽 And keeping things fresh after the wildest nights…

You didn’t just clean — you raised the bar! Your hard work, pride, and magic touch made The Falcon feel like home 🏠 💛

Thank you for all the early mornings, the elbow grease, the quiet dedication, and the extra spritz of love 🧡

THE BAR LEGENDS – Suzi & Stuart! 💫🍻

Every great pub needs great people behind the bar — and at The Falcon, we struck gold with these two legends 💛

Suzi – a HUGE THANK YOU for being the heart ❤️ of the pour 🍺 🥂🧋🍹🍷

Our superstar bartender, the smiling face of the bar, the calm in the chaos, the organisational maestro, the keeper of cold beers and hot gossip 😉

Your positivity under pressure and your genuine care for our locals gave the bar a warm welcoming Falcon vibe.

You’ve been with us almost from the start! We value your loyalty and commitment, and your ‘can do’ attitude to help out whenever help was needed.
A sincere thank-you also to partner Rob for his support in the bar & helping us out with odd jobs!

Stuart Young (aka Youngy) -
Our unofficial tech support, function fixer, and Falcon’s own Swiss Army knife 🛠️
You weren’t on the payroll, but you always showed up — whether it was behind the bar, setting up sound systems, or jumping in when things went haywire.
You did it with heart and without hesitation. THANK YOU!!!

Drop a 🖐️ in the comments for Suzi & Stuart — or tag them to let them know how appreciated they truly are!
