Our rustic cottage and homestead provide a cozy retreat, while our location offers a wide selection of nearby attractions. Enjoy some of the most remarkable vistas and sunsets you are ever likely to enjoy. We are passionate about our work and take pride in providing a unique and unforgettable experience. We take great pride in our long and storied history in this breathtaking part of the world. For over 20 years we have played host to free-range deer who graze, prance and live out their tranquil days on the slopes of the Meander Valley. Today, Springfield Deer Farm is home to more than 600 fallow deer, but there is so much more to our parcel of paradise than just the local wildlife. Book a stay at our homestead for a premium holiday experience – perfect for couples and families alike. We find that many guests come to Springfield Deer Farm because it is the ideal location to unplug, unwind and take in all the natural majesty of Tasmania. 🦌 A look into the immersive Venison Butchery Masterclass, led by Master Butcher Joel Houghton.

Our September Spring Session at The Springfield Kitchen welcomed a curious and engaged group into our classroom kitchen and out onto the farm. Joel shared his deep knowledge of whole-animal breakdowns, cut identification, and yield-maximising techniques, followed by a relaxed, fireside lunch using the fresh cuts.

Thank you to everyone who joined us. Your thoughtful questions, camaraderie, and warm energy made this session one to remember. We’re already shaping the next experience with your feedback in mind.

We've asked the team for their Aussie Christmas faves, so you don't miss out on venison this Christmas! 🦌🔥

For us this time of year means sunshine, family, and of course, the BBQ sizzling away! ☀️ Joel says "no way" to slaving over a hot stove, but to get the family involved in these venison fillet skewers:

🧄 Joel’s (so simple it hurts) Christmas Venison Skewers:
• Marinate venison fillet pieces in garlic, rosemary, olive oil, and a good pinch of seasoning.
• Thread them onto skewers (get the family to help!) and grill on the BBQ until tender and juicy.

Serve with fresh salads, chargrilled veggies, or even some crispy potato wedges for an easy but light and lean festive feast!

Examining where waste is being created and finding a purpose for every cut not only honours the animal by using parts that would otherwise go to waste, it's also rewarding and a lot of fun creating new and interesting products or discovering something that will become a valuable element in a dish or on a menu!
