Catalano’s Seafood is a West Australian family business that was created in 1969 by Francesco Catalano. Catalano’s have an impressive 45 year heritage of bringing the best quality fish and seafood from Australia and around the world, in the absolute best possible condition to your table.

Francesco instilled a hard work ethic and strong passion for the best Western Australian seafood into his family, and this has been the benchmark for the company ever since. The fish mongering family is now headed by Francesco’s two sons, Nick and Paul, who act as mentors to Francesco’s four grandsons David, Andrew, Josh & Mark, together they have over 140 years experience. There’s something special about a tray of freshly baked fish on a chilly evening 🥰

Our Orange Roughy is layered over golden potatoes and baked in a rich Balkan-style ajvar sauce with garlic, cherry tomatoes and lemon, creating the perfect combination of warmth and flavour. 🐟🍋

Simple to make and guaranteed to warm you up this winter

Serves: 4–6
Prep: 15 mins
Cook: 35~40 mins
Ingredients
• 650g Catalano's Seafood Orange Roughy fillets
• 650g potatoes, thinly sliced
• 160g ajvar
• 120g cherry tomatoes, halved
• 4 garlic cloves, minced
• 1 lemon (juice, zest & wedges)
• 120ml vegetable stock or water
• 3 tbsp olive oil
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp sweet paprika
• ½ tsp smoked paprika
• ½ cup fresh parsley, chopped

1️⃣ Prepare the potatoes
Preheat oven to 210°C. Toss potatoes with 1 tbsp olive oil, half the salt, pepper and half the stock. Arrange in a baking dish and bake for 20 minutes.
2️⃣
In a bowl, combine ajvar (you can easily find it at Coles) remaining olive oil, garlic, cherry tomatoes, paprika, lemon zest, lemon juice and remaining stock
3️⃣
Pat the Orange Roughy fillets dry and season with the remaining salt. Place over the potatoes and spoon the ajvar mixture generously over the fish.
4️⃣
Reduce oven to 200°C and bake for 15 minutes, or until the fish flakes easily and the potatoes are tender.
5️⃣
Rest for 5 minutes. Finish with fresh parsley, a drizzle of olive oil and lemon wedges.

🍞 Serve with crusty bread to soak up every last bit of the delicious sauce 🍅

🐟 Honey Garlic Golden Trevally with Coconut Ginger Rice 🥥🍚

For the Fish:
• 500g Golden Trevally
• 3 tbsp honey
• 2 tsp minced garlic
• 2 tbsp soy sauce
• 2 tsp lime juice
• 1 tsp cracked black pepper
• 2 tbsp olive oil
• 2 tbsp chopped spring onions
• fresh Chilli

For the Rice:
• 1½ cups jasmine rice
• 270ml coconut milk
• ⅔ cup water
• 2 tsp finely grated fresh ginger
• Salt to taste

METHOD

1️⃣ Mix honey, garlic, soy sauce, lime juice and pepper in a bowl.

2️⃣ Pat the fish dry. Heat oil in a non-stick pan over medium heat and cook fish for 1 minute on each side.

3️⃣ Pour over the sauce and cook for a further 2–3 minutes until reduced and sticky.

4️⃣ Garnish with spring onions and fresh chilli

🍚 For the rice:
Combine rice, coconut milk, water, ginger and a pinch of salt in a saucepan. Cover and bring to the boil. Reduce heat and cook for 10 minutes. Turn off the heat and leave covered for 5 minutes.

Serve the sticky Honey Garlic Golden Trevally over the fragrant Coconut Ginger Rice and enjoy 😋

Mediterranean-style Snapper Bake 🍅🐟🫒

Fresh snapper fillets baked with cherry tomatoes, olives, garlic, herbs and olive oil for the perfect healthy and easy dinner 🤍

Recipe (2 servings)

• Snapper fillets
• Cherry tomatoes
• Red onion
• Zucchini
• Capsicum
• Kalamata olives
• Garlic
• Olive oil
• Fresh oregano & rosemary
• Lemon zest
• Salt & pepper

Method:
1️⃣ Preheat oven to 180°C
2️⃣ Place chopped vegetables and olives in a baking tray
3️⃣ Add snapper fillets on top
4️⃣ Drizzle with olive oil and season with garlic, herbs, lemon zest, salt & pepper
5️⃣ Bake for 15–20 mins until the fish is perfectly cooked and vegetables are tender

Simple, perfect for winter, and packed with nutrients 😋😋
