Today Mike Buscombe (a direct descendant of James Kestell Buscombe) sent us this image of his grave in Kyneton, Victoria.

I have a question for anyone who knows why was James was buried in Kyneton, Victoria and how he came to end up in Victoria? There must be another story.

A very special birthday brought this lovely group of ladies together at Buscombe’s Restaurant, Prospect Country House for an evening unlike any other.

Stepping back into the 1860s, they dressed for the occasion, settled in for dinner… and soon found themselves caught up in a world of cryptic clues, secrets and sapphire intrigue. 🔍💎

With laughter, a little detective work and plenty of celebration along the way, the birthday girl and her friends made memories that will be treasured long after the final clue was solved.

Once heavily overfished, Orange Roughy became a powerful reminder of the importance of sustainable fishing.

After years of careful management and recovery, this remarkable deep-sea fish is making its way back onto Australian menus.

✨ Now it’s at Buscombe’s Restaurant.

Our Head Chef, James Paul Miller, is showcasing this beautiful Tasmanian produce in a dish that lets the fish shine.

Orange Roughy is delicate, buttery and mildly sweet, with a firm, succulent texture and clean, subtle flavour. It’s a beautifully refined fish that lets fresh Tasmanian ingredients shine alongside it.

We were thrilled to officially launch Buscombe’s Restaurant to the media and share a taste of what we’ve been creating here at Prospect Country House.

A huge thank you to the wonderful Channel Seven team, Alex from Destination Southern Tasmania, and Windsor Robbins for joining us, tasting the delicious menu created by our Head Chef, James Paul Miller, and helping us celebrate this exciting new chapter.

A huge congratulations to Pooley Wines on an incredible result at the 2026 Sydney Royal Wine Show. 🍷

Their 2024 Pooley Syrah has been named Best Wine of Show, as well as taking out Best Shiraz and Best Red Wine of Show.

A brilliant achievement for the Pooley team, the Coal River Valley and Tasmania’s wine industry. Congratulations! 👏
