Global Flavours - Week 12

Named after the pan it is cooked in, karahi is the dish Pakistani students describe when they talk about family meals at home. Rich, simple, and made to be shared from the middle of the table.

Host families: this is naturally halal when made with halal chicken, and it is a good one to put in the centre and let everyone serve themselves.

INGREDIENTS (serves 4):

• 800g chicken pieces, bone-in
• 4 tbsp oil or ghee
• 4 tomatoes, roughly chopped
• 2 tbsp ginger, julienned (half for cooking, half to garnish)
• 4 cloves garlic, crushed
• 2 green chillies, split
• 1 tsp cumin seeds
• 1 tsp coriander powder
• 1/2 tsp turmeric
• 1 tsp salt, or to taste
• To serve: fresh coriander, naan or rice

METHOD: Heat the oil and fry the garlic and cumin seeds for 30 seconds. Add the chicken and brown well on all sides. Add the tomatoes, coriander powder, turmeric and salt. Cover and cook 15 to 20 minutes, until the tomatoes break down and the chicken is tender. Uncover and cook off the excess liquid until the sauce clings to the chicken. Finish with the remaining ginger, green chilli and fresh coriander.

Global Flavours - Week 11

Ask a Korean student what they want on a cold night and the answer is usually this. Kimchi jjigae is the stew that tastes like someone is looking after you.

Host families: one pot, about twenty minutes, and the whole house will smell like it.

INGREDIENTS (serves 3 to 4):

• 2 cups well-fermented kimchi, roughly chopped
• 200g pork belly or shoulder, sliced (or firm tofu for a vegetarian version)
• 1 tbsp gochujang (Korean chilli paste)
• 1 tsp gochugaru (Korean chilli flakes), optional
• 1 tsp sesame oil
• 3 cups water or stock
• 1 block firm tofu, sliced
• 2 spring onions, sliced
• To serve: steamed rice

METHOD: Fry the pork in the sesame oil until it starts to brown. Add the kimchi and cook 5 minutes. Stir in the gochujang and gochugaru. Add the water or stock and bring to a boil, then simmer 10 to 15 minutes. Lay the tofu on top and simmer 5 more minutes. Scatter with spring onion and serve with rice.
