Equipment may hold temp during checks. Not always the same during a full service run.

Before your next inspection, check:
- Holding safe temps at peak service, not just half load?
- Seals, airflow and loading still consistent?
- Would anything flag if checked mid-service?

If your equipment may no longer meet food safety requirements, a few quotes is a good first step - link in comments.
