Great time of year to preserve your herbs. One of our favourites at The Retreat at Froog-Moore Park is Garlic Rosemary Salt. A pinch on your favourite meat, chicken or vegetable dish before they hit the BBQ or roasting pan gives it a great flavour lift. Its as simple as plucking your herbs. As Rosemary is a hard herb I dry it on the bench for a few days prior then, blitz. Grind your salt and a few garlic cloves till a moist sand consistancy. If you are using soft leaf herbs they can go in chopped and simply pound until they are incorporated. The salt preserves them and it can last for a few weeks if you can resist…
