I realised today, as the smell of fresh banana bread wafted through the kitchen, that I’ve been baking this for almost 20yrs. I developed the recipe many years ago while baking every fortnight for our nearest Farmer’s Market (in Armidale), and for a local grocery store that has long since closed.
I started working on the recipe when the B&B was an idea, but far from a reality. We hadn’t started building yet, but I wanted to be sure I could welcome guests with something of our own, alongside local products from many other producers too. Jam, fresh eggs and bread, juice, etc.
During the challenges of 2020, I even bought a ludicrous quantity of Coffs Coast bananas, then baked and delivered banana bread and local juice locally to keep things going as much as I could.
So this is a very genuine nod of thanks to a staple product in our business from day one. I love that something so simple has become so important, and so loved by our wonderful guests.
And for all that, it’s also made with 100% Australian ingredients too. Bananas (almost always from the Coffs coast), different flours from wonderful NSW flour mills, QLD sugar, Uralla’s own free range eggs, Australian butter and spices.
