Whilst harvesting venison at Lake Dartmouth we had the opportunity to fish for Macquarie Perch. An Australian fresh water native cooked on the fire, wrapped in butter and a few herbs, onions and garlic stuffed inside served with a tabouleh. A very rare experience as it is the only one of two places in Australia you are allowed to keep just one fish, not to be forgotten anytime soon. Delicious.
