At Dieci Boutique Restaurant in Devino, Bulgaria, cuisine is not merely crafted — it is unearthed, reimagi

ned, and reborn. We do not imitate. We do not adapt. Instead, we redefine haute cuisine through Bulgarian terroir, fusing ancient traditions with radical creativity. From the Danube sturgeon, cold-smoked as in ancient river villages, reborn as a cheesecake in a sweet sablé shell. To the pine forests of Stara Planina, whose young shoots we extract into elixirs that ferment apricots into autumnal jewels. To the honeycombs of our hives, smoked whole and plated with pickled truffles, where sweetness meets earth in a single breath. To the samardala herb, foraged and dried as our ancestors did, now infused into goat cream and paired with a spiral of summer vegetables — Bulgarian ratatouille, reinvented. Each dish is minimalist in form but profound in depth. Each plate is an essay in taste: a dialogue between sweet and savory, preservation and freshness, memory and invention. We honor Bulgarian flora and fauna — samardala, dzhodzhen, Cherni Vit cheese, rakia, honeydew, walnuts, and apricots — not as ingredients, but as living history. Our philosophy is guided by three principles:

Radical Locality – every plate begins with the terroir of Devino and the surrounding Bulgarian landscapes. Technique as Language – fermentation, smoking, pastry, infusion: classical methods are our words, tradition and science our grammar. Sweet–Savory Tension – the balance of contrast defines our culinary identity, where opposites ignite each other into harmony. We are not simply cooking meals. We are composing Bulgaria’s next culinary chapter, one that belongs to both our land and the world. This is Dieci: A restaurant, a philosophy, and a vision of Bulgarian gastronomy reborn.

THE 2026 GREEN GARDEN IS OFFICIALLY IN THE GROUND 🌱 The Garden Behind the Cuisine.

Every year, as spring gives way to summer, a special ritual takes place at Dieci Boutique Restaurant.

At the end of May, when the season is right and the soil is ready, we plant our annual Green Garden.

What you see today are not simply rows of young vegetables and herbs. They are the beginning of hundreds of future harvests that will find their way directly from our garden to our guests' plates throughout the coming months.

Over the next weeks, these carefully planted beds will produce a vibrant collection of seasonal vegetables, aromatic herbs, edible flowers, fruits, and specialty ingredients that define the true meaning of farm-to-table dining.

Our Green Garden is just one part of a much larger vision.

At Dieci, sustainability is not a marketing slogan—it is a daily commitment. From our vegetable gardens and fruit trees to our herbs, pollinator-friendly landscapes, composting initiatives, and the honey produced by our own bees, we continuously strive toward greater self-sufficiency while reducing our environmental footprint.
