We came here on our first vacation together and our first destination was camping at Barton Creek in the Cayo District. We knew, then and there, that we just had to move here. We even put a timeline on it that we would move here by 2012! Instead, we moved from our home state of Missouri to Austin, Texas and spent the next several years vacationing around Central America, but always with Belize in

the back of our minds. By 2019, we were starting to feel a little stagnant and knew it was time for a change. We decided to quit our jobs, sell our house, pack up our dogs, and take off exploring. We spent about five months driving and hiking throughout the western United States, staying in as many different types of places as we could. We stayed in over 25 short-term rental properties on that excursion and it made us realize, “we could do this rental thing!”

After that trip, we moved to Chapel Hill, North Carolina to try some new ventures, with the dream still being to end up in Belize one day. Then, all of a sudden… COVID. There’s nothing like a global pandemic to make you re-evaluate your timeline. We decided it was time for Belize! “If not now, when?!”

So, once again, we sold our house, nearly everything we owned, packed up the dogs, and headed here, our dream destination twelve years in the making!

We got a couple of new trail cameras last week to put in the jungle at the back of the property. Lots of the usual suspects (agoutis, possums, birds, dogs, etc), but we spotted a few new friends this week! A Grison, a White-nosed Coati, and an Armadillo (maybe two, but they’re always in such a hurry)! These cameras are set up in and near a seasonal creek bed, so once the rains get started we’re hoping to see a lot more action!

We’ve had a new friend hanging out at the pool all week. It took us a day or two to realize it had a head (it sleeps with its head buried in its body). Then after getting a better view we were even more confused, but Sarah at Belize Raptor Center and Sanctuary immediately knew it was a Potoo! (Google some images of these characters. They’re so goofy!)

We’re so excited for our friends’ brand new restaurant Damgood's Belize here in San Ignacio!! I went this weekend and had one of the best chicken sandwiches I’ve ever had! Super fresh ingredients, incredibly fast and helpful service. Highly recommended if you’re looking for a quick and delicious lunch!!

This year’s birthday week culminated in a day trip to Mountain Pine Ridge for Adam’s birthday! We stopped at Carmz for breakfast, Rio Frio Cave for some light spelunking, Rio On Pools for swimming, and then ended the day at Kontiki Ceviche Bar for some cold beers and nachos!

Yesterday was Rebecca’s Birthday! She had a whole itinerary planned and we were going to take pictures showcasing her favorite places in Cayo…

Instead (long story short), she got to watch me run a temporary water line to the house!

But, she still got to do a few of her favorite things: morning run, Guava Limb for dessert, afternoon reading by the pool, and a new pizza place for dinner (we highly recommend Pizzeria La Leña).

My parents were in town this week, so we took my mom to Upe Nai for an amazing Mayan cooking experience! Miss Steph guided us all the way from dried corn on the cob to the most delicious tortillas, tamales, and salbutes we’ve ever had! Such an incredible learning experience and something everyone visiting Cayo should check out!
