Oatcakes
The recipe in Beth & Bessie's Island Table is the traditional Scottish version, made with rolled oats—just as it should be.

This week I tried making them with quick oats to see what would happen. They were softer than I wanted and just didn't have the same texture or buttery bite.

So I baked them again, this time following the original recipe with rolled oats. Added a bit of extra brown sugar and butter, baking at 360 F. (Everyone's oven is different) What a difference! Crisp, buttery, and exactly the oatcakes I remember.

Sometimes the old recipes really do know best.

It's finally time to share something I've been working on...

Beth & Bessie's Island Table is a collection of recipes, stories, and traditions from Prince Edward Island.

I've wanted to write this book for many years. I've collected recipes while watching and helping my grandmother and mother cook. I wanted to preserve not only their recipes, but also their knowledge, traditions, and the stories that make them special—for the next generation of home cooks.

Over the coming weeks, I'll be sharing a few recipes, the stories behind them, and some of the places that inspired this cookbook.
