Flood silver linings…
Living by the wetlands,
as the flood recedes, fiddleheads continue to pop up, so we have extra time to sustainably harvest.
The wildlife this spring is wild! So many birds, some we haven’t seen before. Lots of animals roaming around, minding their biz.
Hodor chased a bear up a big oak tree (at least we think that’s how it got there)
The dogs were howling with the wolves last night

and the first campers of the season have arrived 🏕️
a bonus of living near northern wetlands… Fiddleheads!
(Ostrich Ferns with the U-shaped stem and brown paper-like skin) - not the fuzzy ones, they’re a different variety and not edible!
Harvest: 1/3 of each clump to ensure continued survival of the plants
Clean: Carefully remove the brown paper-like covering in a bowl of water, transfer to large pot with water.
Blanch: Simmer for about 5 minutes
Drain: in a colander
Cool: in bowl with cold water and ice
Dry: One layer on a tea towel, pat dry
Storage: Plastic baggie in fridge or freezer
Cook: they’re great quickly sautéed in butter with garlic, salt/pepper, and some lemon juice at the end.
