How easy is it to prepare Raw Salmon?
Well for me it was time to improve.
After years of enjoying sushi and also rolling my own I have changed my fish preparation.

For years I followed a technique of barely thawing my frozen fish and slicing it when it was still fairly firm. This was an ok way to go because I was able to get the thickness of the sashimi right and was able to slice it without shredding the meat. Waiting for it to soften and using a non scalloped dry knife created a mess with my fish so I stuck to the fairly frozen slicing technique.

A couple of observations from my previous technique. The outside of the salmon would thaw slightly and I would mush the meat on the extremities as I held it. This necessitated trimming. Additional the knife could not differentiate between frozen fish and bone therefore depositing tiny bits of bone in my sashimi pieces. These pieces were allowed to finish thawing , then trimmed and were used in the evening sushi meal.

After years of doing this I felt that the fish was somewhat soft, I was tired of squishing the fish (and having to trim this off) and that the flavour and texture wasn’t up to s***f. BUT I always enjoyed day old sashimi. The penny dropped. The meat has to dry out.

My new technique is to defrost the salmon a day or 2 before you intend to eat the fish. After thawing, skin the fillet, wrap in paper towel , zip lock bag the fish and put it in the refrigerator. Replace the moisture soaked paper towel a few times. After each change you will see the fish dry out and gain a wonderful workable texture. I have had the fish left in my fridge for up to 4 or 5 days before it starts to smell fishy. The fish losses its water weight , firms up and is very workable.

As simple as this technique is, it has made all the difference in world to the texture, flavour of the fish and the workability of the flesh.

Note:
1. A sharp scalloped moist blade is perfect for this job.
2. The eating of raw fish is not recommended by all authorities.
3. I have been told that fish has to be frozen solid for a minimum of 3 days to kill the parasites that may be in the fish flesh.
4. I have been eating raw salmon for years without health issues

Tale of a First In A Guides’ Lifetime
Fishing with Jeff – 2020 a year to be remembered

Jeff Lueng arrived on my dock for his first time visit to Kyuquot Beach House. Up to the Beach House and back in 10 minutes…..met Peter our chef and had a quick look at our place and the ambiance we present. Announced to his friends that this is a “perfect” spot.

Jeff later gave me the run down on the BC lodges he has visited over the years. To say the least I was honored by his kind words about us based on his extensive knowledge of the BC coast.

Now, I got to get the skinny on my new guest.

Jeff, a Vancouver businessman, sideswiped by Covid was starting a tackle company. I was wondering why his bag was so so heavy but when he displayed the contents of the “bag” I understood. Inside, a ton of beautiful hand made jigs and spoons.

Jeff is one of those keen anglers that oozes enthusiasm.

Jigging is his main love and he landed in the right boat with me, as I too, love to jig.

Killer spots, tons of action all shallow water. Jeff was in heaven. The blue job was unstoppable.

But fumble fingers, dropped the rod….striking a fish. Jeff felt horrible offering to pay etc. etc. Asked if it ever happens…..let me think…..NO. Jeff with his heart in his boots from having lost my sweet light jigger was still quite enthusiastic to fish and fish we did.

Without access to my GPS 9 (slug line) Jeff and his fishing partner Norm were totally unaware that I was guiding for target the rod, NOT more bottom fish. 3 swings over THE SPOT and not Norm nor myself but Jeff hooked his rod.

What a surprise for Jeff,,,,he was so pleased not only does his lure catch fish ….it catches rods too! I was a little disappointed that it took so many tries.

2021 Fishing Forecast

Prognosis for 2021: With DFO expectations for 2021 salmon returns are similar to 2020, I anticipate fishing regulations will be the same as 2020.

As a starting point, our 2020 Covid protocols are established and can be adhered to in 2021 if required. First nations of Kyuquot and surrounding areas have all been vaccinated so the fear of bringing Covid to Kyuquot has diminished greatly.
Looking though a crystal ball …. I am hopeful that the vaccine roll-outs are going to have a positive affect on controlling the pandemic; resulting in the reduction or removal of travel restrictions.

Many clients have a established a booking date with reservation letters forthcoming. I look forward to hearing from others to slot you into our schedule. Check out current availability.

2020 Kyuquot Season
As strained as 2020 was the world over – we at KBH had a good summer season. Due to Covid Protocols, we operated in 2020 at 50% capacity and was fully booked at that level. The season couldn’t of been better.

The 2020 fishing experience at KBH was at typical exciting levels with lots of fishing action. The lower number of guests in the lodge provided a more intimate and wilderness sensation. The gourmet meals received praise from all guests.
