Coles Bay Vacation Retreat We have a small Bed and Breakfast/Vacation Rental property located on Vancouver Island. My mother, Jan and step father Maurie Turner built our house in 1978.

We are close to Sidney, Victoria, Victoria International Airport, BC Ferries & golf course. It was their dream house and they loved living in this beautiful area for almost forty years. We have had many enjoyable family events including birthdays, Christmases, Easters, Thanksgivings and my sister's beautiful wedding. She loved to garden and entertain and always thought the house would be a good sp

ot for a small bed and breakfast. Mum passed away in 2014 and my husband and I decided to pursue her vision and open the house to guests in her memory. We are really enjoying our visitors and providing a comfortable relaxing place to stay while they are visiting our gorgeous island. About Us:

Howie and I have kind of a fun background story. We were childhood sweethearts in high school growing up in Duncan here on Vancouver Island. In university we had a big fight and I ended up moving to California. While there I got married, raised a family of three and went into business with my first husband for twenty-six years. When my kids were grown and on their own I chose to start a new life and move back to Canada. I reconnected with Howie ten years ago and we have been together now for over ten years, married and enjoying our grown children and grandchildren! While I lived in California in a little coastal town called Fort Bragg we had a house with a small grandmother cottage that was perfect for a vacation rental. We renovated it, started to rent it by the night and found it was a lot of fun! We had people come to us from everywhere including England and they always had interesting stories. One of my favorite experiences was a weekend when my cousin and her husband were visiting for one night. They were planning to go camping for a week and thought they would test out their tent in our back yard for the night. At the same time I had an interesting surfer "dude" who wanted to rent our cottage for the weekend. Each conversation with him on the phone started with "Hey dude!". He booked for three people and then over three more calls kept adding people. The cottage slept four so we agreed the other people would bring sleeping bags and sleep on the floor or on the deck. When the weekend came and our surfer dude and company and my cousin showed up everything went really well. As the young fellow and friends were leaving he said,"Hey dude, you guys are so cool to let us all stay here, you even rent out your lawn!" We had a good laugh. I really enjoyed hosting people on my property so we thought this would be a great way to work into our retirement years. Howie and I are finding having a bed and breakfast as satisfying and fun and as we hoped it would be! We look forward to meeting you and helping to create a vacation worth remembering!

CREATED GRAND MARNIER/SAMBUCA CHEESECAKE - YUM!

Recently we had a wine and appetizer invite to our guests staying in our Coles Bay Suite. They have been wonderful and keep treating us with wine, beer and cheese and crackers. Social distancing outside, of course.

We gathered under our Kiwi bush and plum tree in the garden. We put up little led lights for a nice glow as the night came on. We had a lot of fun. 😎

When my sister, Cate who has been visiting, and I went shopping and were picking out wines we were approached by one of the people working there. He asked what we were looking for and then suggested some lovely wine choices.

Then he asked me if I was going to be baking for our little event. I said yes. He suggested a cheese cake creation from a New York restaurant. A two layer version with orange liqueur Grand Marnier and licorice Luxardo Sambuca on a waffle cone crust.

Hmmm, sounded interesting. Couldn't find the restaurant or recipe so I decided to invent.

The crust was easy, just crush some waffle cones and mix it up like a graham cracker crust.

Then I found cheesecake recipes using liqueurs and substituted with the Grand Marnier and Sambuca. Then I thought a semi-sweet chocolate ganache with a little of the Grand Marnier would be nice poured on top of the cheesecake.

Raspberries as a garnish looked colorful. Next time I would cover the top with raspberries as they were a tasty counterpoint to the chocolate and cheesecake.

It was a big hit and I highly recommend the combination of flavors. 😋

I have gluten and milk issues so we are always looking for recipes that adapt for my allergies. We found a recipe for a milk free coleslaw dressing. It's great, especially if you like coconut milk.

This creamy coconut coleslaw takes me back to our vacation in Maui. It is, I could say, a “copycat” of the famous “France’s Coleslaw” we tried in Coconuts
