This turkey was almost a ham.
The Thanksgiving weekend plan was set - our families would join us at The Gillespie House for dinner on Saturday. We don't have a lot of experience hosting Thanksgiving dinner but I had the weight, thawing time and cooking time figured out for an unstuffed bird. Check ✅. I went to Foodland but there was not an unstuffed bird at the right weight so I opted for a stuffed Butterball at the correct weight. I decided to cook a separate batch of stuffing as a back-up, and tucked the lovely 15-pounder in the fridge to thaw in time for Saturday's feast. *Cue sound of ominous music*
Saturday's dinner was set for 5pm. The cooking time for our 15lb beauty was about three-and-a-half to three-and-three-quarters of an hour plus the resting time. At noon, I took it out of the fridge to begin prep. A bit of nervousness here so, although I had my marching orders from www.canadianturkey.ca, I read the instructions on the package.
"Cook from frozen."
Huh.
The cooking time from frozen for a bird of this size was about six-and-a-half hours. I wondered why the package didn't include the cooking time for a thawed bird. Then comprehension landed, like a turkey thrown out of a helicopter, and I whispered "Oh s**t" as two very separate strings of information finally met each other, quietly, as I stood at my kitchen counter with one turkey and five sides waiting to be cooked.
I had a $45 Bacterial Butterball here and five hours to go before dinner.
And as I was barreling down Main Street frantically considering the alternatives of an 8:00 dinner or jettisoning the whole damn tradition and going with ham, I passed Ralph's Meat Market. Pulled a U-turn and went inside -- and all of you locals know the rest.
Ralph's had two rows of gorgeous, locally-sourced turkeys, unstuffed, thawed and ready to go with more in the back. And it was here that I found a $62 12lb Hail Mary.
Lesson learned? Read the package instructions, or don't and shop local 😜
