Traditionally grown in the northern and central Andes mountains from Colombia to Argentina. It is claimed that this delicious, crunchy and tasty tuberous root vegetable enhances colon health & aids digestion. It is all usable from its leaves to its roots. Eat it raw. Peel it like one would peel a potato. You can have it sliced or added to a variety of salads in Julienne strips. Yacon does not need any dressings to enhance its natural water vegetable sweet taste.
