As we renovate and rise from the heart of the jungle, every day at Ojo del Fénix feels like a transformation. We love to share this fun and easy jungle vibe DIY, make your own coconut milk, cream, and yogurt! 🥥🥛🌿

We’ve come such a long way, and while we have endless projects ahead of us, we’re doing our best to live in harmony with the land as we build. We aren’t serving this to guests quite yet (this homeschooling mama’s hands are full!), but the magic of making our own essentials from the property is too good not to share.

The Secret: You can do this at home! Just make sure to buy a mature coconut (the brown, hairy ones). You need that thick meat—the young green “pipa fría” are just for drinking! Then be sure to add WARM water to the blender along with the chunks of coconut meat. Hand squeeze the pulp once it’s blended well, then strain through a cheese cloth or nut bag. That’s it!

✨ Pure Magic: Zero additives or strange ingredients—just a fresh, mild, and creamy taste that store-bought cans can’t touch.

✨ The Milk: Perfect for drinking, cooking, or making probiotic yogurt overnight. 🥄

✨ The Cream: Let the milk sit in the fridge for a while, then skim off the top for the dreamiest morning coffee. ☕️☁️

✨ The Flour: Dry the squeezed pulp in the dehydrator and pulse in the food processor to make coconut flour

✨The Shell: Makes an excellent fire starter

We are gently transitioning into the green season, tiptoeing into its lush embrace.
The early rains arrive hot and heavy with humidity, bringing powerful thunderstorms whose deep rumble you can feel in your chest — a visceral reminder of our physical connection to the earth and the raw power of Mother Nature. Yet as the weeks pass, the rain assists the shift as the air begins to cool.
Across our expansive acres, flowers are gracefully giving way to fruit. Trees are heavy with mangoes — especially abundant this year — along with limes, oranges, jocotes, guaba (the beloved ice cream bean), pink guava, soursop, cas fruit, golden and green coconuts, nance berries, and star fruit.
Soon pineapples, avocados, mamon chinos, and several varieties of bananas will follow.
There is something deeply nourishing about this time — the promise of abundance, the dramatic rhythm of the rain, and the simple joy of picking ripe fruit straight from the trees as the jungle prepares for its most generous months ahead.

Birding paradise right on our expansive 150+ acre jungle property! 🌿🦜

Here at Ojo del Fénix we regularly spot toucans feeding from and resting in our treetops, macaws soaring overhead, oropendolas, countless hummingbirds, tanagers in every color of the rainbow, bold kiskadees, and the enchanting songs of thrushes that fill the air from dawn until dusk. We’ve also seen herons in our ponds and creeks, owls at night, and so much more — all without leaving the grounds.

And if you want even more variety, two world-class nature reserves with groomed hiking trails — Rainmaker Conservation Park and Manuel Antonio National Park — are just 30 minutes away.

Costa Rica truly is one of the best birding destinations on earth, and we’re lucky to be surrounded by it every single day.
