New on the menu: Tavas Lefkaritikos - lamb shank, rice, roasted vegetables, Greek yoghurt.
A century ago, few houses in Lefkara had an oven big enough for tavas. On Sunday mornings, families carried their clay pots down to the market square and the village bakers cooked them all together while the village shopped, drank coffee, and talked.
The Agora is located where the market once stood, and the dish is still being served here today.
