From Bluefin Tuna with green asparagus and wild garlic to Black Cod served in a delicate crustacean and passion fruit broth, the new Signature Menu showcases Lars Wolf’s culinary vision through exceptional ingredients, refined techniques and perfectly balanced flavours. As main course, the Holstein veal fillet with BBQ glaze, asparagus, beetroot and Frankfurt green herbs brings together the menu’s signature seasonal flavors. The finale is Pavel Tanev’s Jardin de Rhubarbe, combining rhubarb textures, vanilla crème, almond, lime and strawberries in a refreshing and elegant dessert.✨
