Exciting things are happening this week! We have a beautiful new dome currently under construction, perfect for all sorts of events - weddings, parties, corporate gatherings, art shows...

Last night, we had the pleasure of cooking for the team who are busy building it. In villa Limón where they are staying, we served:

•Caramelised goat's cheese tostada with fresh seasonal figs, dried fruit, walnuts, miel de caña, and a raspberry vinegar

•Seafood paella

•Burnt Basque cheesecake with fresh fruit, including mangoes from the estate

I love making use of the beautiful fruits grown on the hill for our guests, and even better when they help to pick them for me!

Super sweet green figs featured at lunchtime, served fresh with the cheese selection, and also baked onto a delicious creamy cheese and caramelised onion puff pastry tart.

At dinner time, I made the most of the mangoes, with homemade mango ice cream, fresh mango, and brandy snaps.

Breakfast at Palacio de Cantalobos. Eggs Benedict with a Spanish twist: saffron hollandaise, light and airy pan de cristal toast, my homemade smoky maple bacon, roasted tomatoes and fresh avocados.

Whatever the size of the group, we will always serve up a delicious breakfast with a beautiful backdrop.

We had such a wonderful couple of days showing our guests what we have to offer at Palacio de Cantalobos. I have so many photos, so I will start with Friday.

For lunch, we served Ensalada Tropical, using the beautiful fresh mangoes grown right here in the hill, so sweet, juicy, and fragrant. Alongside this, we prepared meat and cheese boards displaying the delicious Spanish produce.

For dinner, we served goat's cheese, caramelised onion, and walnut crostini, gilda pintxos, and medjool dates wrapped in my homemade smoky maple bacon. Our guests enjoyed these while I gave an informal and relaxed cooking class on the preparation of a mixed paella.

For dessert, we served a Tropical Eton mess: homemade meringue, Chantilly cream, and of course the lovely mangoes again, as well as kiwi, blueberries and a mango purée.

Friday: we cooked and served a 3 course dinner in El Cortijo for the guests' last night. A lovely way to end their stay, with promises that they will definitely be back! Dishes chosen from the new Spanish inspired menu were:

Gambas pil pil
Chicken and seafood paella
Pavlova

There are so many dining options at Palacio de Cantalobos, and here is just one - our casual, Spanish inspired 3-course dinner - cooked and served for you and your guests in your own beautiful villa. No taxi, no designated driver, no babysitter... just sit back, relax, and let us look after you.

It is our privilege to have the opportunity to host "Noche de Wolf Song", an immersive art and dining event at Palacio de Cantalobos. The dates: 23rd to 25th October, 2026.

The main event is centred around the large-scale painting, “Wolf Song” by Jake Andrew- inspired by the very landscape and the "noise" of the wind (which, in fact, gave the palace its name).

Guests will not merely eat; they will be immersed. The experience unfolds across different locations of the palace, with each course accompanied by a bespoke projection and sound installation built entirely from the very brushstrokes and energy of the canvas. The environment shifts and evolves as the palette does, creating a living, breathing narrative around you.

This is not a dinner. It is a journey through art, sound, landscape, and flavour - designed for those who seek the extraordinary.

Your stay includes:

- A two-night stay at Palacio de Cantalobos (all meals and selected drinks included in package price)
- A guided tour of the palace and its remarkable grounds
- An exclusive painting workshop, allowing you to create your own response to the landscape
- A personal introduction to the visionary family who built this marvel from the ground up - Jonas, Harriet, and Ida.

Spanish pork sausages, the creamiest free range scrambled eggs, roasted tomatoes, garlic mushrooms, and... HOMEMADE BACON! Yes, I make my own bacon for Palacio de Cantalobos guests. I haven't found really good bacon here. Rather than serving something I'm not happy with, I found a way to make it myself. So now, we have delicious smokey maple bacon. Would you like to try it?!
