Today is my birthday and with me Ecocirer celebrates ᴇᴄᴏᴄɪʀᴇʀ ʜᴇᴀʟᴛʜʏ sᴛᴀʏ 🤍 I’m sharing one of my favourites. Not everything has to have chocolate.
Some cakes are meant to be just as they are, and pavlova is one of them: light, airy and beautifully simple. A few thoughtful changes can make it lighter without losing what makes it special: less sugar in the meringue, partly replaced with coconut sugar, no sugar in the cream, and potato flour instead of cornstarch.
7 free-range egg whites
300 g sugar (or replace part with coconut sugar)
2 tbsp potato flour
Juice of ½ lemon
500 ml full-fat cream, unsweetened
Lots of fresh berries
Beat the egg whites to soft peaks, slowly add the sugar and beat until thick and glossy. Gently mix in the lemon juice and potato flour. Shape on baking paper and bake at 100°C for about 1¼ hours or longer. Let cool completely. Whip the cream, spread over the meringue and finish with plenty of fresh fruit. 🍓A little birthday pleasure, saved for special occasions. 🤍
