•Creamy Chestnut Soup•
In winter times we sometimes need soulfood which is not only rich in flavours but also warming our heart🧡
Here in Galicia there are so many chestnut trees that we could collect a lot for the colder days and we want to share our favourite recipe with you⭐️It‘s silky & smooth with earthy & nutty notes from the chestnut⭐️
Servings: 2 hungry ones as main course / or as appetizer for 4.
Ingredients:
1 onion (~ 100 g), roughly chopped
1 clove of garlic, sliced
50 g white part of a leek, sliced in rings
20 g celery stick, roughly chopped
200 g chestnut, cooked & peeled
600 ml veggie broth
200 ml soy or oat cream
50 ml white wine
3 tbsp olive oil
salt & pepper to taste
10 hazelnuts, caramelized in brown sugar
balsamic essence or soy milk foam
celery leaves
Heat the olive oil in a big pot and sauté the onions & garlic over medium heat until they‘re soft
Add the leek and the celery and sauté for 3 min
Add chestnuts, sauté for another 3 min, deglaze with white wine
Add veggie broth and cream, simmer everything together for 10min
Blend in a highspeed mixer until smooth
Bring it back to boil for a minute and taste with salt & pepper
Fill in a bowl and garnish with the hazelnuts, balsamic or milk foam and leaves
