Le Biau

Le Biau The house and grounds are a haven of tranquillity and offer a truly romantic setting for a stop-over or a long stay.

Le Biau is a recently renovated 16th century farmhouse with four comfortable and distinctive en-suite rooms and is set in 8 acres of private gardens that look out over the surrounding countryside. Breakfast is included in the price and evening meals are available as table d’hote.

I actually remembered to photograph this starter just before it went out... so often I forget and only remember as it’s being elegantly demolished!!

This one comprised of 2 picillo peppers stuffed with brandade (a mix of salt cod and creamed puréed potato) inverted and stood on a bed of a warm red pepper & sweet chilli purée/salsa on a plate with a salad of rocket with a dressing of olive oil, acacia honey and white balsamic vinegar, in the centre of which was a Corne des Andes tomato which had had the end cut off to level it when standing up (mirroring the peppers!), then inverted in a shot glass and marinated with basil olive oil and aged balsamic vinegar all day. It was then placed on the salad and brushed with a sweet confit de piment. Easy really!!😜

We have enjoyed some new and exciting dishes as the season comes to a close. This starter is sesame crusted tuna with a soy ginger lime sauce alongside Bengali “blackened” salmon crusted with a mix of cumin, coriander seeds,paprika, chilli flakes, garlic salt and accompanied by fromage blanc and mint all served on a banana leaf from the garden.
