The making of a grilled vegetables terrine.
Backward. Process a bit long but easy.
Starting by thinly slicing eggplants and zucchini; Brush them with good sunflower, or canola oil. add spices from good sel de Guérandes, mixed peppers, paprika, cumin.
I used canned piquillos . Tomatoes and apples are raw when you set them in the mold.
You alternate the colors in the mold, sprinkle with olive oil and scatter herbs, I used cilantro, parsley, tarragon, chervil, mint, dill. salt and pepper every 2 or 3 layers. stating and finishing with a layer of eggplants.
Bake in your oven at low T° until golden; Let it cool, as some h juice will come out and then flipit on a plate like you would do for a tatin pie.
Decorate again with herbs and a f drieele of olive oil.

A friendly dinner thanks to Gari connections. A pleasure to host Georgian and Ukrainian guests. From decors, w**es, desserts and videos, a joined"work of art". Merci Gari, Natalia, Manana, Giorgi, Datuna.
Starting with a "gâteau de légumes grillés": seasonal eggplants, zucchini, peppers, tomatoes and apple terrine with lots of herbs and spices.
Followed by a circle of rice, fennel and while fish - maigre. All vegetables and fish from rue du Nil of course.
Then desserts: baba and rum brought by Natalia, a M*F in La Garenne Colombes (Meilleur Ouvrier de France))
Gari brought a delicious passion fruit and raspberries tart by the oldest bakery in Paris, on rue Montorgueil.
Manana and Giorgi brought amazing w**es directly from their property in Georgia, and beautiful artisan ceramics.

A couple of days ago, I stumbled on a post by Ina Garten in the NYT, the Barefoot Contessa. How could I ignore her?
At 78, she is still a star and her way of hosting and cooking is so inspiring, i relate so much - except maybe for some shopping 😇.

A sunny, arty, restaurants and family visits day in Central Paris.
Starting with a small exhibition about jewelry and objects made of unusual metals, engravings capturing light.
Strolling in the covered passages, in Montorgueil. Enjoying with my sister a sea bass filet with vegetables quietly sitted on a terrace.
A visit to Saint Eustache , to a local supplier of kitchen utensils, a visit to one of my favorite groceries supplier.
And finally sharing and early dinner in les Halles with my daughter visiting from London with some friends; I savored a starter of burrata, old specie tomato and pesto.
Walking all the calories along the day 😇 - steel, aluminum- ART & GOÛT.

HISTORY and FOOD : a family bond.

My younger son, teaching History in UK recently wrote an article about “The missing couscous in London”
His fields of expertise are related to Colonialism and Communication.

Why would you easily find excellent Indian restaurants in London, authentic couscous and tajines in Paris, delicious Indonesian cuisine in Amsterdam ?

I let you discover the article on Instagram. And Vittles magazine.

It reminded an old experience I had decades ago when living on the left bank close to the Faculté de Pharmacie where I was studying. I already liked having friends over in my small studio and I loved surprising their taste buds. The shop at the foot of my building was a butcher. One day I asked him to advise me for a piece of beef adapted for a couscous. His answer, at that time was “ cant’ you cook a pot-au feu like everyone? “ Well, well well... Since then the couscous became one of the most popular dishes in France and I don’t think he would dare to say the same thing today in 20226.

And a very recent one when Arthur being in Paris for a week, we decided to go out for dinner. I proposed a gourmet Indian in my block that he not been to yet. The answer was “No thanks, I have so many good Indian ones in London, let’s try something else”

Strolling, shopping, cooking in the Marais .Besides a few iconic Museums, this area offers iconic Mittle Europa shops and fare.

These shops are linked to the area History. They are essential if you want to keep some authenticity. Please make sure when you visit to favor authentic addresses, make sure not to favor tourist traps.

Went to an exhibition celebrating the architect skills of Victor Hugo.
As you know Victor Hugo had many talents from writer, including novels and plays, poetry, to painting and drawing, designing, and politician. Today let’s celebrate his connection to architecture .

This is the ART side. To celebrate the GOÛT, I came up with some recipes, inspired by some of his characters and the menu at the cafeteria.

First of toast with goat cheese for Esmeralda in NOTRE DAME DE PARIS . and her goat Djali. A sourdough toast with goat cheese pureed with herbs, and olive oil with some lentils she could have eaten in the medieval times

Then a bun for Gavroche in “Les MISERABLES ” He could have shared on the BARRICADES. Gavroche is a young boy from the streets of Paris, an emblematic character in [Victor Hugo’s] novel [Les Misérables] published in 1862. He is the eldest son of the Thénardiers, but he is abandoned to himself in the street and lives without the affection of his parents. Joyful, insolent, resourceful, and generous, he shares what he has with those less fortunate than him. He embodies the spirit of Paris, rebel, free and courageous. His death on the barricades Insurrection: During the republican uprising of June 1832 in Paris, Gavroche went to the barricades He is killed while singing a nursery rhyme ("I fell on the ground, it’s Voltaire’s fault...") while he collects cartridges. A bun with sweet mustard, lettuce, shredded mimolette, cucumber and Jambon Price de Paris.

The third one is a Spanish bowl for RUY BLAS , the valet in love with the queen, becomes a man of power inhabited by an absolute of justice. Heroic greatness and Machiavellian trap, political corruption and broken destinies: A bowl of rice, tomartoes and manchego cheese.
